Nigella's brined turkey

Ok, have followed recipe, but needed loads more water to completely submerge the beast. Is now outside protected against animals etc. This just feels wrong...am scared! Can I cook tomorrow? Or do I leave it in brine till Xmas morning. Has anyone done this? Gulp.

I always overcook the nigella turkey because it cooks so much more quickly than you would expect.

I did the brined turkey this year. It was with a crown and came out delicious and moist. I think the maple syrup glaze finished it off well. It sat in the garage in a bucket for 2 days and have to say the best turkey I've ever had. Lots of compliments too Wink

we didn't cover ours and thankfully didn't catch... We're making porchetta today - so I've stripped the turkey carcass and bagged up portions for freezing (plus a pot in the fridge for snacking on)... am not usually a turkey eater so am going to browse some ideas to use when defrosted- Thai green turkey curry would work I think?

Turkey and ham pie! Lovely. Or raised pie, like a pork pie, with Stuffing, Turkey, cranberry sauce etc.

Sorry, meant to come back. Came out well, will just do a crown next year though as so much more than we could eat, as usual!
