Buffet ideas?

I know it's been done to death, but...

I'm having an open house on the 27th.

People will be coming and going at different times, so I need ideas that I can make ahead and shove in the fridge to whip out/reheat.

I'm a damn good cook if that makes any difference?

The only DR is myself- vegan, but I'll probably be too busy to eat anyway!

Also, does anyone have a recipe for mulled cider? And an alternative for the kids and non-drinkers?

I can even get the bbq going if needs be! 😃

You can buy mulled fruit punch, I think mine was either from Tesco or Lidl last year. Or Whittards do a mulled wine instant tea - it's 95% sugar but my god it's delicious.

Cous cous, rice or lentil salads are delicious especially with roast veg. And they keep in the fridge fine. Or quinoa actually.

Quiches. Can be served hot or cold.

Baked Camembert, spiked with garlic and rosemary, served with nice breads.

Fab ideas already!

Spam I'm heading to Tesco tomorrow, so will look out for it!

I should have mentioned...we could do with not shopping from the 23rd/24th onwards, as we live in the stinks now, and it's a bit of a trek!

ZigZag my fil would love that! Could you talk me through it? I wouldn't want to put it in the oven until it arrived, would I?

sausage rolls....little ones... make millions, freeze them and cook from frozen in batches through the day

also little yorkshires filled with slivers of roast beef....buy ready made yorkshires unless you really want something to do with your time, roast a joint of beef sometime between now and then, and make a good thick gravy, slice the beef thinly and freeze it. When the day comes, you can boil the gravy and tip it and the defrosted beef into a slow cooker to keep warm. Every so often reheat a tray of yorkies and just dob a slice of beef in, people will be queuing at the kitchen door!
...we did this at a little bash at my mother's and people were begging to know when the next tray was coming through

Make big quiches and cut them small ...individual ones are faffy and the filling to pastry ratio is never right.

Little cheesy muffins or scones...again they freeze well, and will reheat nicely to become oven fresh.

little onion tartlet things maybe??

Big pile of profiteroles for pudding

Hot rolls....great big joint of something and put someone in charge of carving

A couple of bottles of that rekorderlig cider can be a good base for mulled cider, it is already spiced/vanilla-ed, or Pimms Winter warmer is a favourite of mine, it can be hard to get hold of, but you can use up the summer Pimms with apple juice, slug of brandy, and fruity bits and i dont think many folk would know the difference tbh

If you can bear it a Mocktail bar is fun for children, just a couple of different juices, a couple of heavier concentrates to give you a tequila sunrise type effect, some pink lemonade, fancy ice cubes and sparkly straw and most children are in seventh heaven.

Buy lots of those sturdy foil trays for any canapes to pass around and lots of clear disposable glasses for the Mocktails.

I find the Camembert takes 20-30 mins so yes I would wait until your guests arrive. Great idea from zigzag, it is delicious.

ZigZagandDustin · 13/12/2017 16:15

I just take 2 round Camemberts out of the packets and into a nice oven dish (you can leave it in the wooden box it comes in if high quality), stab with a knife and push slivers of fresh garlic and small sprigs of rosemary into the slits. Then bake in the oven (I've an Aga so it goes in a very hot oven but never burns) I'd say about 200degrees for 20 mins. It's pretty forgiving. You'll see easily when it's all melted.

Sorry haven't been back.

I think I cracked the mulled cider.

I may have drunken too much. I had to taste it!

my favourite buffet treats are

roast tomatoes with garlic and pepper, serve on rounds of toasted (or fried in tomato oil) sourdough and top with shaved parmesan - can be served warm or cold.

You could use a vegan cheese and bread too

or topped with burrata and drizzled with fresh green pesto- yum

quorn cocktail sausages reheated in honey and mustard, or served with a hot spicy tomato chutney

mini onion bhaji with cucumber and mint raita dip

filo pastry cigars filled with spinach, feta and a touch of nutmeg and oregano

mushrooms stuffed with stilton (I know, life's too short to stuff a mushroom, but they are good to eat!) could always do stilton creamed mushrooms and serve on a bite sized crouton

spiced nuts
