If you have any Baileys, I'd recommend BBC Good Food's Baileys Banana trifle. James Martin's Black Forest trifle is also delicious and is also on the BBC Good Food site.

My family loves Bakewell tart, so occasionally I make a Bakewell inspired trifle with amaretti biscuits, raspberries, raspberry jelly, custard, amaretto-spiked cream and flaked almonds on the top. If raspberries are out of season, I might substitute them for cherries and use Harley's black cherry jelly.

I do this one every Christmas, and use vodka. It's so simple but tastes amazing and looks great in a really good glass bowl. I don't usually buy the custard but make my own.

Dh family trifle recipe handed down several generations:

  1. Trifle sponges in bottom of dish. Good layer
  2. Soak in sherry
  3. Add chopped banana and tinned mandarins
  4. Thick layer of custard made with birds custard powder. Adjust the proportions of powder/milk to make it thicker- you need it to set. Allow to cool before adding!
  5. Thick layer of whipped cream
  6. Decorate with coloured sprinkles

Years ago I had to cobble together a trifle from whatever I had in, but it was so popular I've had to make it every year since - and it's super easy.

You need two Jamaican ginger cakes, rum, custard, cream, tinned mandarins, chocolate flake.

Chop up a ginger cake, put it at the bottom of the (huge) trifle dish, douse liberally with rum, add some strained mandarin segments.

Whack on a good layer of custard, then do a second cake/rum/mandarin layer. Then another custard layer.

Finish with cream - preferably boozy, orange flavoured cream - and scatter broken up chocolate flake on the top.

It works with regular or chocolate custard.
