First year making Christmas dinner. I need a meat and veggie gravy. Do I find a make recipes (any recommendations?) or just buy premade?

Its not difficult to make gravy, and buying shop bought will ruin all of your other hard work, as it is nasty!!

Is the Jamie Oliver good after freezing and defrosting? Somehow, after almost 20 years of making roasts, I have lost he ability to make gravy so I need something REALLY foolproof.

I never really understand why people buy pre made gravy if they're cooking a roast anyway like turkey, chicken, beef etc. I always just pour all the juices from the roasting tin into a dish, put in the fridge and once it's cold I take the fat off it, heat and some boiling water then the bisto thickener. There you have it. Gravy! For the veg option I'd probably just buy a nice pre-made from m&s or something though!

I made Jamie's gravy last year. I found it a faff tbh. And don't particularly like the taste! I made a gravy with the turkey that I'd added herbs and garlic to and added that to the Jamie gravy and it was bloody good.

I prepped lots of side dishes before and froze them. All delicious. I spent hours searching recipes and sourcing ingredients for the 4 course meal. I went all out on the table decorations and handmade the centrepiece and name tags. I perfected a christmas cocktail and ordered games in and set up a christmas playlist. Spent Christmas eve peeling spuds and sprouts. Spent an absolute fortune in food and drink for my 11 guests. Was the first time I'd done Christmas dinner and wanted it to be perfect.

Then my 3 year old work up at 3am with the vomiting bug so had to cancel every guest and send my youngest away on his first Christmas. Was just me and sickboy as DH was working.

This year I'm buying M&S food including gravy. And they're not getting a starter either.

I've made Jamie's gravy and frozen it. Although not sure I'm overly keen on the taste so I've also ordered M&S gravy too

Jamie's gravy is excellent but leave out the star anise and REALLY roast the bones to give it some colour. I also keep a chicken carcass and some giblets from a chicken to add to the chicken wings to add a bit more depth. You do need the turkey juices though.

I find it great to have enough volume so I don't worry about running out of gravy on the 27th!

I don't 'get' how you make that gravy, using the pan deglazing method, if you haven't just cooked a turkey, how can you make it in advance?

I mean, I make my gravy using deglazing but I can totally see why you might not want this faff on Christmas day (I don't cook on CD, no idea what will be cooked, won't be turkey) but I don't see how you can make it in advance, unless I'm looking at the wrong one?

The Jamie gravy is ‘Make-ahead’ by roasting a pack of chicken wings on top of chopped veg (carrot, onion, celery etc) rather than the turkey.

We're picking up our turkey on the 23rd. The butcher's giving me the crown to roast, the legs to confit and the rest for gravy, so I'll be able to pre-make proper turkey gravy. Sorted : )
