Ok so I have the main quinoa/lentil/but roast sorted but I want to do some more adventurous side dishes that the usual roast potatoes and veg. Dishes to make it a bit more special than the usual Sunday roast... So what side dishes can I do?

Parsnips and carrots roasted in maple syrup are lovely,
shredded sprouts with chestnuts and leek,
Good old braised red cabbage
Puy lentils with red onion and herbs

I borrowed Deliciously Ella Everyday from the library this morning. There is a receipe for Brussels sprouts roasted with new potatoes hazelnuts and maple syrup. It looks really good but I do love sprouts.

I'm doing cauliflower cheese and stealing from the Bosh video with the Wellington and veg. We are all vegan in this house. Probably will get a tofurkey roast and vbites sausages with bacon. I'm having parsley sauce on my dinner Blush

DH is making a nut roast, I had it before when I was a vegetarian and it was lovely. Apart from the usual i will have stuffed butternut squash and red cabbage in wine - it's yummy.

Has anyone tried Cashew cheese? Very interested in tasting it, but it's so bleedin' expensive.

I do

  • honey and coriander seed roasted carrots & parsnips
  • roast potatoes (obvs)
  • braised red cabbage, with plenty of apple, sugar and spice
  • mashed sweet potato
  • roast sprouts with vegan bacon
  • stuffing
  • boiled peas (love em)
  • mushroom gravy

I basically make enough for about 16-20 people then eat it for days and days Smile.

I'm still undecided what I'm making, but I'll definitely do whole roasted cauliflower either as a side or main.
Last year we did a Wellington with vegan haggis, it was amazing!
