Christmas Dinner Must Haves!

I'm going to be hosting my first Christmas this year for 8 people. I was just wondering what are everyone's Christmas dinner must haves!? I want to make sure I don't forget anything!Smile Thanks!

Big pork joint with lots of crackling
Nut roast for vegan mum
Pigs in blankets
Stuffing (meat and veggie version)
Red cabbage with red onion and apples
Roast potatoes
Maple carrots and parsnips
Fried sprouts with chestnuts
Bread sauce
Apple sauce
Redcurrant/cranberry sauce
Gravy

This is the first year I've not done turkey but only fil really likes it so we have ditched it. I'm cooking for 8 in my tiny house but fingers crossed it will all be ok.

Yorkshire puddings, roast potatoes and pigs in blankets are my only essentials. But Christmas dinner in our house is always:

Mashed Potato
Honey-Roast Parsnips

Lashings of Proper Gravy

Chicken (don't like turkey)

Sage & onion stuffing

Roast parsnips with cream & bacon
Cranberry sauce

Lots and lots of gravy

Dessert changes every year but may do Apple pie & custard this year

None of us like xmas pud so normally trifle or chocolate bombe or similar. With plenty of wine to drink

Graphista my grannie used to make steak pie and turnip on Hogmanay! We do steak pie for Christmas now, nothing for New Year, DP is usually working and the bairns are too wee to stay up for the Bells.

Stir-fried sprouts with bacon and white wine
Carrot and swede, probably mashed
Bread sauce (I love it)
Cranberry sauce (meh. It's jam for meat.)
All the cheeses.
Christmas cake/pudding/Yule log/mince pies.

Bread sauce is great! The flavour is not unlike bechamel sauce, but the texture is slightly different. Goes beautifully with roast turkey.

Our standard Christmas dinner:
Roast turkey (cooked Delia Smith's way, lots of butter and streaky bacon covering it and inside a foil tent for most of the time in the oven, always good)
Pork, sage and onion stuffing
Gravy made with giblet stock
Bread sauce
Cranberry and orange relish
Cocktail sausages (much prefer them not wrapped in bacon)
Roast potatoes
Parmesan roast parsnips
Brussels sprouts (just plainly boiled)
Chantenay carrots, probably baked in the oven in a foil packet with a little orange juice, tarragon and butter/olive oil
Peas (my daughter, poor deluded young woman, doesn't like sprouts and I feel there ought to be something green on her plate but actually we all like peas with a roast)

Christmas pudding with vanilla ice cream and/or thick double cream

I make all of it. I love cooking Christmas dinner.

I'm toying with adding mashed swede this year. We all like it. It's not needed but Christmas dinner isn't about that, is it!

Those of you saying that Yorkshire puds aren't tradiitonal, where does that idea come from? I am a Yorkshire girl (living in Cheshire) but always had YP with roasts as a child, esp at Xmas. We dont do them regularly with roasts now, but definitely at xmas, I think I would be sacked if I suggested otherwise!!

Those that have 2 meats, do you have a large gathering - or just like to have a choice of 2 meats?

We have generally had 6 people max, so only ever had one roast, a turkey, which is more than enough. We are only the 4 of us this year, although DC (19 & 16.5) can each eat for at least 2!

Pigs in blankets (using variety of yummy sausages from local farm shop)

cranberry sauce.

Have done bread sauce sometimes in the past, but no one is that fussed so wont do it this year.

Will have an xmas pud but kids not keen so it may not get started till Boxing day!

Having read some of these posts, I do wonder if we should do more veg, but we usually have enough and also like to have a buffet for xmas tea so need to leave room for that.

Does anyone have starters and if so what? I used to do a prawn based starter, but dropped it as we never that hungry (having scoffed naice choc biscuits with coffee during present opening!!!). Wondered whether to resurrect the starter this year, but not sure what to do? DD loves smoked salmon but DS hates it, so that is out.

Gasp your carrots sound nice, do you have a 'recipe'?

My Dd is not a sprout lover, though will eat the odd one or 2. But she loves peas so may add those this year. I love sprouts, as does DH but his sister also dislikes them. Wonder if sprout hating is hereditary from SIL to Dd?!!!!

Kath, there'll be 7 of us and I mainly do 2 meats because I find Christmas dinner a bit boring. Given the choice I'd rather be eating fajitas or a big curry.

Hardly any of you are having mash? I hate a roast without mash. I thought majority would have mashed pots with a roast? Mebs it's a northern thing to have mash.
