profiteroles in a huge pile

Nigella's clementine cake. I'm no good at links but if you look on her website it was there. It's incredibly easy to make and keeps really well.

I'm doing a chocolate roulade. Can be made the day before (is actually better that way) and will have a hot chocolate sauce I think, which can be heated up at last minute.
Will also do a fruit salad. We don't like Christmas cake/pudding here!

I'm doing champagne jelly with berries in it (Jamie Oliver recipe). You can do a non-alcoholic version, will probably do that for myself as am pregnant.

panetone - the italian cake. Waitrose have a scrummy one with choc chips.

My mum always used to make a cake where you sandwich ginger biscuits together with cream and then cover the whole thing with cream and cover with foil. Leave in fridge over night. The biscuits turn into a sort of cake. V. simple but V. scrummy.

You could always come up with your own variation of a trifle. Use special homemade jelly etc to give it a special touch.

I saw a recipe for a pannettone bread and butter pudding. Just need to find it now. But it sounded really yummy - just a christmas twist on a classic

We do merange (sp?) nests with clotted cream ( we do live in Devon, you could do ice cream) and raspberries with a raspberry sauce. The raspberries are frozen ones thawed out so all soft and juicey. The sauce is some of the berries and juice simmered up with some sugar then strained to remove the pips.
Its easy to assemble and nice and light after a rich dinner.

PeachyIsNowAChristmasFruit · 12/12/2006 17:38

Oooh I love meringues

(Where in Devon? Thinking of Exeter for my PGCE)

Mince pies with whipped cream; alcohol added as required for adults.

Bread and butter pudding with brandy and dried apricots.

Trifle made with pears, simmered in red wine, sponge, custard, cream, toasted almonds.

fartmeistergeneral · 12/12/2006 19:28

poinsettydog · 12/12/2006 19:36

smittenkitten · 12/12/2006 19:51

we always have a chocolate fondue with fruit to di - means you can have it as light or as rich as you want!

poinsettydog · 12/12/2006 19:52

angmarie · 12/12/2006 20:11

A question - see the panettone recipe link below. Do you reckon you could make it up in advance and just not bake it? Or will it go all stodgy and fall apart?

marymillington · 12/12/2006 20:44

reckon you could cut it up and butter it and layer it, make up the custard separately and then pour that on just before baking. i never bother with a bain-marie by the way. i serve it with a raspberry coulis(or fresh berries if you can find some from somewhere) to cut through the unctuousness of it.

I'm doing a shortbread and ice cream pudding (a layer of shortbread topped with ice cream a layer of camamel topped with a crumble layer of shortbread) which was the good food magazine a few month ago.
