Fish main course for Christmas dinner please

Has anyone got any good ideas for a fish main course? I'll do veggies etc, so it needs to be something that would go with potatoes, broccoli etc. Also my 100 year old grandad will be here so nothing too fancy. I can adapt what he's having. Thought about salmon en Croute but that's it so far....thanks!

Just a great big roast salmon joint - less of the fuss (because I'd rather save my stodge allowance for the roasties) but still spectacular. nice with a lemon and herb stuffing and some hollandaise sauce. Just make sure it's de-boned, first.

I did Nigel Slater's salmon en croute last year. It was very good. What about a seafood platter?

Great minds ypthink alike! I've done it before so would like something different really. I like the idea of a herby stuffing.
What did you do with the halibut Pestilence?

DH & I would love seafood platter but not sure my mum would be keen, and am certain my grandad wouldn't like it at all.

Drowned it in butter and roasted it, it was massive, served 14.
Served it with pretty much all the usual stuff.

A whole baked salmon. Easy peasy. Beg borrow hire if steal a fish kettle. Into it, put water, onion, garlic, carrot, mixed herbs A spoonful if white wine ( optional) and simmer. Add the fish, simmer for 15 mins. Turn off. Leave about 5 mins. Check done in middle. You can do it on the hob(s) or oven,

Serve with:

Garlic mayonnaise for the adventurous
Mayonnaise or hollandaise for the traditional
New potatoes and crusty French bread,
Lemon wedges
Parsley sauce for the 50s English
Shrimp sauce for the rich

Spectacular.

Or,

Lobster Thermidor if you are a plutocrat. Yummm

Or thick fish stew.

Or wonderful fish pie. Think either pastry ( puff) or mash as topping.

Layers of
Cod
Haddock
Halibut
With hard boiled eggs shrimps and capers if you like them scattered between the layers and a white sauce to moisten. Can add anchovy to the White sauce.

I made salmon coulibiac last year, Delia's recipe and it was gorgeous, I made it the day before too.
