cashew nut roast with mushroom and sherry sauce -same every year for last 10 years

the nut roast is out of the Sarah Brown vegetarian Kitchen cook book and contains cashew nuts, mashed parships and a layer of sauteed mushrooms in the middle - its fabulous and even non-veggies like it

its also yum cold on boxing day

Usually have something along the lines of the one Bumbleweed described but this year we will be at ILs and MIL is a keen foodie so I'm yet to find out! (meateaters will be having something OTT like wild boar )

bumbleweed · 02/12/2006 13:53

ooh one year we had a spinach and cheese roulade out of delia - that was nice but a faff to make

BettySpaghetti · 02/12/2006 13:58

Just remembered another one - a filo parcel with chestnuts, mushrooms etc. Can't remember where the recipe came from though I'm afraid.

dramaqueen72 · 02/12/2006 14:01

A kind of 'meatloaf' which is sosmix, nut roast mix, stuffing and mashed carrott/swede layered up in a loaf tin, and baked. edible hot or cold, and goes with the (veggie) gravy, roast potatoes, veggies that the other have.

bumbleweed · 02/12/2006 14:13

filo parcel sounds lovely bettyspaghetti

SnowMuchToBits · 02/12/2006 14:54

When my vegetarian sister has come to stay for Christmas I have done a vegetarian nut Wellington - yum!

Carmenere · 02/12/2006 15:13

I make a quorn wellington for dp and dss with apricot and chickpea stuffing and mushroom duxelle and I make it with a quorn roast so there is plenty for them to gorge on leftovers and it feels like a special meal.

suzywong · 02/12/2006 15:15

now tell me, Carnemere, is there enough fat in a quorn item to make it succulent? I remember eating it when I was bloodyminded veggie for 14 years (It was Morrisey's fault). Do you have to add extra fat or anything?

binkacat · 02/12/2006 15:15

chestnut and leek tartlet

suzywong · 02/12/2006 15:17

when I was veggie I used to make myself and eat in its entirety a whole gratin dauphinoise. All veggies love cream and cheese and don't let them tell you otherwise.

xmasmummy · 02/12/2006 15:27

binkacat- the chestnut and leek tartlet sounds nice do you have a recipe? btw i am not veggie but will happily eat veggie food sometimes but there are times i just have to have a bit of meat

Carmenere · 02/12/2006 15:27

Oh Suzy my dss won't touch cream, butter or any cheese except mozzarella. I use plenty of olive oil in the stuffing and the apricots add a bit of succulence. Also the pastry usually has a fair bit of fat in it. I did a duck for mil and me last year Plenty of fat there

bumbleweed · 02/12/2006 17:23

suzywong I too love cream and cheese

amusing story about potatoes dauphinoise - family 'do' at ILs and when food is served cousin's new posh boyfriend exclaims 'ooh dauphinoise, ow delicious'. My (yorkshire) MIL looks at him askance and says 'No that's a potato bake!'

bumbleweed · 02/12/2006 17:24

how delicious, I should say

Stockingsofdinosaurs · 02/12/2006 17:44

LOL did she think it was something to do with dolphins?

bumbleweed · 02/12/2006 19:16

she had cooked dauphinoise but I dont think she had ever heard it called that before

DizzyBinterWonderland · 02/12/2006 19:20

mushroom filo parcel thingies from m&s, plus all the veg etc everyone else is having.

ProfYaffle · 02/12/2006 19:27

I made a gorgeous chestnut and red wine loaf one year, then promptly lost the recipe and have never made it since ....

poinsettydog · 02/12/2006 19:35

when dh was veggie i made a tasty aubergine and tomato filo pastry roll thing.

baubleweed · 03/12/2006 11:17

mmmmmm aubergine and tomato

melpomene · 03/12/2006 11:29

Pancake gateau - pancakes stacked up with different vegetable fillings between the layers, and cheese sauce over the top. I have 3 different recipes for this so I haven't decided which fillings to use yet. Pancakes were the only suitable thing I could think of that the dds would both like.

In previous years I've usually had nut loaf or different types of pie. Stuffed mushrooms would be another nice idea, but I'm the only one who likes them.

SmileysPeople · 03/12/2006 11:33

Where can I get that recipe carmenere?
I did make a mushrrom wellington one yr it was V nice but returned to the old nut roast, it now seems as traditional and christmassy as turkey. Do also do turkey for unveggie family. Organic Obv.

Carmenere · 03/12/2006 11:43

I made it up Smiley. I may have written it down on here last year, I'll have a look....

SmileysPeople · 03/12/2006 11:44

Thanks it souns scrummy, just the sort of thing I'd like.
