anyone got a great pastry recipe for mince pies?

I have tried delia and Nigella and don't like either pastry. Starbucks mince pies are lovely but i can't find anything on-line to reveal what is in it!!!!

do you have a great recipe to share?

I love my Mum's but the pastry is quite sticky so can be annoying to work with! Do you want the recipe?

my dad told me 8oz flour, 2oz butter, 2oz lard/vegetable shortening, 3tbsp water.

rub fat into flour until like breadcrumbs
add water and bring together
rest for 30 mins (you and pastry!)
roll out and get pieing.

It works fine for me, get it nice and thin. Is very simple but if you have lovely mincemeat should be fine.

Have read about adding icing sugar / oragne rind to it - hthat might help.

The one above is very simple but very light.

  1. Get in car
2.Drive to Tesco 3.Park car
  1. Get trolley
  2. Go to freezer
  3. Locate Jusrol frozen shortcrust pastry
  4. Take home. Thaw.
  5. Roll out thinner than you thought.
  6. MAke mincepies (sprinkle with sugar before baking)
10 Accept complements gracefully Well, it's worked for me for the last 10 years!

Hi,
Here is my pastry recipe which I have been making for the last 27 years!! Never fails and is always delicious! ok,
1lb sr flour
4oz butter
4oz hard marg
2oz white fat(cookeen or similar)
1 egg(separated)
milk

Sieve the flour and rub in all the fats to resemble fine crumbs
Add the egg yolk with enough milk to make a firm dough
Knead until smooth then refrigerate for 20 mins

Make your mince pies as normal, brush the tops with the lightly beaten egg white and sprinkle with caster sugar.
Bake gas 6, 200C,400f for about 20 mins. That amount makes about 30 mince pies. I usually tart up mincemeat with a spoonful of rum or any other spirit you like! I never get fed up of these, and they freeze very well!

Sorry, sort of hijack - has anyone tried frangipan on top instead of pastry? If so was it nice?

oh you mean the Nigella one?

Looked at it and it sounds lovely (almonds, mincemeat hmmmm!) But the idea of making, rolling and cutting out pastry and something else is one step tto far for me.

Once again I have replied with zero assistance!!!

I use the same recipe as dimpledthighs (although the amount of water can vary), with the addition of some orange zest, which just makes it nice and christmassy!

will go and look for nigella recipe for frangipan. Wondered because MIL finds pastry a bit indigestible, so thought a thin pastry case with a different topping might suit her better.

Hi,
I usually get about 30 pies from that amount of pastry, you can of course roll it thinner. What I sometimes do is make the lids much thinner than the base, it depends on whether thay are going to be eaten with a spoon or picked up! If you do like frangipan, almond, marzipan, I sometimes put a little square on top of the mincemeat then the lid on top!
