any ideas on a real quick, cheap recipe? the stronger the better as they're for DH.

we've got black pepper corns
onions
pickling vinegar.

what else do we need/how do we do it.

I think you may need sugar too, just google a recipe, I've never made them but I would love to so keep us informed.

that'll do...i dont use sugar. Add a dried chilli if you want them to have a real kick. You can also add other pickling spices such as cloves, coriander seeds if you have them

No sugar needed. The pickling vinegar will have all the neccessary. You will salt to make the brine for the first stage. I love home-pickled onions but it's such a messy job. Kids love them too but since I've had them I don't seem to have the time.

lol. ah DH is insisting, right I have fennel seeds and dried chillis - he he he DH won't knwo what's hit him, - are they ok to use?

Sorry, forgot about the salt bit, it draws the water out of the onions or shallots so that the vinegar can soak in and preserve them.

Peel your onions, then place on a baking tray and sprinkle lots of salt over them (just cheap cooking salt), leave overnight. I then give them a quick rinse to get rid of salt, then pat dry and pack into jars then just top up with your vinegar and any spices. Its the peeling of the shallots that's a PITA.

Enjoy (after about 6 weeks)!

I love pickled onions so much, but DH hates them . before I met him mum and me used to have a great Sunday tea of cheese, crackers and a whole jar of pickled onions! I miss those times.

i'm doing cookies for that VM - using the recipe on mioau's thread also doing hand prints/foot prints of the boy as well.

Hi Munz,

We do foot/hand prints and they are always appreciated. But I like the idea of home made edible goodies for DD's great grandad. I am going to try the Lemon Fork biscuits from the Miaou's thread. Thought I might decorate them with some lemon drizzle icing too!

ok guys got my onions in today - I was amazed how much wawter came out! lol. need to get some more thou and do another batch for the PIL

we put peper corns and chilllis in there.
