What do you eat on Boxing Day?

I need some inspiration, the husband has requested something different to the buffet type stuff I normally do. There will be about 15 of us so don't want anything too arduous. What do you all have?

We have gammon cold, (baked in Guinness on and for Christmas eve, and eaten hot) leftover cold chicken from Christmas day, with mashed potatoes, beans and chutneys. It's nice and simple and fits around football. Depending whether it's a home or away match DH goes to, we might have it in the evening and have a fry-up earlier in the day.

I do not cook on 26th, or the 27th, with the possible exception of a bacon sarnie style breakfast, or maybe reheating the christmas pudding if we were too full for it on the day

It's cold cuts/nibbley things and leftovers all the way here.

Should anyone wish to turn the oven on they would be more than welcome!

Normally just leftovers from xmas dinner but last year we did a slow cooked leg of lamb which was lovely so we are doing that again.

It's a buffet style effort here. Did it last year as we had the PILs for the day, and we had newborn DS2. FIL loved it and he happily spent the day trundling back and forth to top his plate up!
This year I'll add a nice ham and maybe some pulled pork.

I get to cook Boxing Day for pain in the arse laws, after going out for christmas dinner that mother in law calls her contribution to the festive season.... Doing lamb this year, but have done beef for the last 2 years... I wouldn't mind, but she doesn't like anything remotely spicy or and of my "new fangled" recipes.... I'd rather have curry or a buffet to pick from :(

Usually turkey and ham pie. Onions, celery, mushrooms, leftover turkey and ham, butter, add flour and cook out, white wine and then milk to make white sauce, paprika, nutmeg and mustard to season. Topped with ready made puff pastry (very occasionally home made shortcrust if my mother I can be bothered). Served with bubble and squeak (called fry up here) and pickles. Can be expanded to feed more by adding cold cuts/pork pie/ sausage rolls etc.

At home, it was always ham sandwiches and Guinness.

In our house, we tend to do a handful of M&S party packs, Turkey and ham sandwiches, and smoked salmon on brown bred. As we have people coming in all afternoon for dd's birthday.

My dream is curry. If I could be sure everyone would be there to eat at the sa,e time, I would do a lamb rogan josh a few weeks ahead and freeze. A turkey leftovers curry in the morning. Homemade lay rice (I have a reasonably straightforward recipe). M&S ready made puppodums. I make a tomato and spring onion salsa, and we always have mango chutney out too. A batch of Bombay potatoes. A dish of French beans in coconut milk. Perhaps a vegetable curry. I"d possibly buy in ready made starters, if I thought we needed them.

Cheeseboard, ice cream, mince pies, andort, to follow Sorry, port.

A dish Which We do a couple of days later Just for ourselves is a ham and Stilton potato bake that I got in good food years ago. Uses up leftover ham, Stilton, Turkey stock and thyme or Rosemary.

Normally a stew of some description, made in advance and whacked in the slow cooker as we are out shooting all day.
Last year my DPs were here and had a friend over, so they went out for lunch and we all had cold meat, salad, JP's, coleslaw, crusty bread etc in the evening which was nice for a change :)

My cousin used to do cold meats, chips and pickles. They used to roast a piece of pork with the turkey on Christmas day, then eat it cold with leftover turkey on Boxing day. Proper chips as well!

I make turkey and vegetable soup out of (most of) the Christmas left overs. Lots of garlic and herbs in. Make sure I have some half baked bread in to go with it. Dd hates it and has tomato soup instead. It means that everything (except a carton of soup) is gone by the end of boxing day.

I tend to do 8 Jewel Rice (basically a special fried rice that my mum always did to use up leftover meat) or a cacciatore (again something my mum did). Friends do a Christmas risotto with stuffing, Turkey, veg etc thrown in. One year they came to our's with it and there was so much we had the remaining made into a pie with filo pastry and extra chestnuts.

Only 5 of us so pancakes for breakfast. Turkey chips and peas for lunch (always cooked by DH) then Turkey sandwich and pickles, rice, crisps, cheese etc for late tea with a few beers.

Genius very much a off the top of my head recipe (there were proportions in my mum's old cookbook but I haven't seen sight of it for years)
Ingredients:
chopped onion
cooked prawns
diced cooked chicken
diced cooked pork or ham
cooked rice
cooked fresh (or defrosted frozen) peas
1 egg, beaten
soy sauce
Method:

  • heat oil in wok, add onion and stir fry
  • add chicken and pork to heat through
  • add rice, the prawns and then peas, cooked for about a minute after each addition
  • add beaten egg and soy sauce to taste
  • scoff the lot, washed down with a good Gewurztraminer, hold tummy and retire to the sofa to digest
