Make ahead christmas food

Ok so I want to get organised with food as this is the first year I will be hosting christmas for 12 people. What can I make ahead and freeze for the big day and also what store cupboard basics can I buy now ready?
Also any good stuffing recipes I'm allergic to nuts and can only find recipes with nuts in! Are there any things that you don't recommended being made in advance? I have the delia christmas book and 3 lots of back issues of christmas magazines but still don't have clue!

They were fine. I put mine in a disposable foil roasting tray, so I didn't even have to transfer them, just drizzled them with hot goose fat and put the tray on a baking sheet to make it solid. They were lovely and crispy on the outside and fluffy on the inside.

Right. I won't be happy til I've tried it myself anyway. This year I'm going to ignore the naysayers in the staffroom at work and do the parboiling the day before thing.

If you have or can get hold of a copy of Nigella Christmas, she has tons of recipes that can be frozen.

I baked loads from it last year such as biscuits and muffins. However, by the time it came to thawing them out and finally eating them, we had so much chocolate and other goodies in the house that some of it went uneaten. So this year I'm going to bake and eat as I go, which is fine by me!
