Was wondering, do I really need to par boil potatoes before roasting tomorrow? I'm rapidly running out of space and pans Hmm
Will it be ok to just put them straight into hot goose fat tomorrow without par boiling them??

They'll take longer to cook and you run the risk of them being burnt on the outside and raw in the middle. Plus, you need the fluffy edges that parboiling gives them to get nice and crispy.

Oh bum! I kinda thought that really but was hoping to get away with it! Can I par boil them now or will they go black?

Peel them and leave them in cold water overnight. You can par-boil them early tomorrow. Let them cool down so the fat won't spit when you put them in the hot oil. You can leave them in a colander to cool and then you can re-use the saucepan.

Yes you need to parboil
And they might go a bit 'grey' if you do them too early.
But you can do them, fluff the edges and cover them (they are actually better if you let them go cold before they go in the fat)

And if they go a little bit grey, the golden crispy bit should disguise it.

A lot of celeb chefs advise parboiling the night before though I've never done it. Why would they go black?
