Making a leg of lamb...

I'm going to cook a whole leg of lamb to take to my dms for Christmas Day. I was thinking of putting it in at 11pm and cooking it on low all night then getting it out at 5/6am. Would this work?

My friend did this with no problem, she put it on really slow, basted it well & covered it loosely in foil in an inch of water. She also marinated during the day by rubbing a pot of natural yogurt & a tbsp of all spice mixedtogether toake a paste ( Xmas cake spice). The meat was so tender, it practically fell off the bone.

We do a lovely leg of lamb recipe - 5 hours at 170 - but can take a bit less time depending on the size of the leg. Loads of root veg around the leg - pots, carrots, parsnips, celeriac with thyme, rosemary and streaky bacon bits, onions and garlic. Brown, then add onions, garlic, bacon for a few minutes, then chuck in veg and a whole bottle white wine plus equivalent water. Cover with foil ans put in oven. Really lovey and tender, meat just falls off bone. Not sure what temp you would do for overnight though as i often check mid cook to adjust time. is nice cold, the stock is lovely mopped up with bread and then you can use leftover stock for soup. maybe cook today and take over cold tomorrow and then heat up stock.......
