Can I par boil potatoes tomorrow?

And if so do I keep them in water or in a dish in the fridge?

I've just par boiled potatoes, roughed up, coated in flour and goose fat and put in the freezer, ready to roast on Wednesday - I don't know about keeping them in water though

If it's for roast potatoes, do as Costa says.

if it's for other kinds of tattie, just parboil, allow to cool/dry out a bit then put them in the fridge in a bowl.

dont leave in the water as they will just go soggy and crumble.

not water for reasons others say; we just leave ours out (no fat cover) and roast next day. Do this all the time, but maybe because kitchen is not very warm.

Dish in the fridge (drained and fluffed) worked for me last year.

I put my par boiled potatoes in the porch :) well drained, gently roughed up back in the stock pot and in the porch :)
