Defrosting homemade stuffing, cranberry sauce and custard

I felt particularly smug and well organised a few weeks back and made and froze the following:
pork, sage and onion stuffing (Delia recipe)
double portion of fresh custard (Nigel Slater recipe)
cranberry sauce (Jamie Oliver)

Now I'm feeling a bit less smug as I realise I have zero experience in bringing them back to life safely without giving us all a dose of food poisoning. When and how to defrost? I assumed the best thing would be taking them out this evening and keeping them until the 25th in the fridge, but the official American advice for Thanksgiving turkey says cook stuffing from frozen:

"It is safe to freeze uncooked stuffing. Ingredients can be combined, put into a shallow container, and frozen immediately. To use it safely, do not thaw it before cooking. Cook the frozen stuffing until it reaches 165 °F."

Delia thinks there's no probs with defrosting in the fridge. So is this American panic-mongering or Delia playing fast and loose with our safety?

And custard! raw eggs - what the hell was I thinking!

There are no problems with defrosting in the fridge, I do my stuffing (contains cooked bacon), and raw chipolatas frozen on day of purchase this way. Presumably your stuffing has raw pork/sausagemeat in it. I think it is more dangerous to cook stuff from frozen in a conventional oven, because it takes a long time to get hot and then there is the opportunity for bacteria to multiply. If you are worried, you could defrost from frozen in the microwave immediately prior to cooking.

How come the custard has raw eggs in it, haven't you cooked it before freezing? The idea is that cooking the egg yolks thickens the custard. However, I would use it as soon as you can after thawing.

Thanks girly, I'll defrost in the fridge then. Yes, the Delia stuffing has raw minced pork. We don't have a microwave so defrosting that way isn't an option.

And yes, of course, thanks for reminding me that the eggs were cooked while making the custard. I, erm, forgot about how it was made. I'm a bit less worried about that now.

Off to take out frozen goods and squash into fridge now... Happy Christmas.
