roast potatoes

Can I boil them (and the parsnips) on xmas eve, so I've just got the roasting bit to do xmas day?
And if so, how do I keep them overnight? I guess I should do the shake in the pan to fluff them up a bit while they are warm, so they'd need to be drained...

I have done this before (not for xmas) and its really not the same - the texture changes and they can brown a bit too.

Do what my parents are doing and buy frozen ones then put them in a fucking roasting bag to cook because 'it keeps all the flavour in' ffs. I said I would help cook so I could have nice food but for some reason they're obsessed with bloody roasting bags!!! and don't get me started on the frozen roast potatoes....

In answer to your question I would do with parsnips but not the potatoes. Not over night anyway maybe in the morning. I've read of people doing it on here before though

Steam them. They only need about 8 to 10 mins depending on size, enough to make them slightly soft on the edge to fluff. Then roast roast roast away!

Alternatively you can do this, fluff them up, freeze them (flat on a tray until frozen then move to a tub or bag). Defrost overnight Xmas eve and they'll be ready to roast Xmas morning
