Honey glaze ham ?

Just free a bit advice.
I'm doing a Gordon Ramsay honey roast but not his glaze.
So the game will be cooked in water for 3 hours then in the oven for about an hour
When shall I put my glaze on?
It's honey,mustard and Demerara sugar.

Iv never done a ham before so not confident of changing the recipe.
Any help would be great and also shall I steep it in water over night to get the saltiness out? 1.5kg and a 3 kg ham.

Boil it up in the pan, then change the water before bringing it back to the boil to cook for the 3 hours (which sounds a bit long to me, so keep an eye on it) then pat it dry and put the glaze on as it goes into the oven.
And well DUH Xmas Grin don't forget the small one will take half the time of the larger one Xmas Grin
Or do it in the slow cooker if you have one, and just clag them with glaze and leave them to it for about 6 hours on high. Pop them in the oven just to crisp/brown a bit before standing and carving.

Thanks for the reply it's simmer for 3 hours if that makes a difference to your thinking it's too long??

Do you reckon I will need to leave it in water changed regularly for a few hours Before cooking?

The more you change the water, the more salt you'll get out, but a couple should do it - if you soak it for hours it will soak up lots of water and spit and sputter all over (you know like cheap bacon) when you cook it.

Ok great I'm soaking the small one tonight so il just do it for a couple hours then back in the fridge for cooking tomorrow. should have left soaking until then bah .

Iv done a lot of googling and took screen shots of recipes/cooking advice so hopefully it can't go wrong.

It's hard to fuck up a ham badly unless you totally cremate it - it will be fine and delicious Xmas Grin

Good luck with the duck,only time iv ever had it is at a Chinese buffet and when my sister gave me a poorly looking over cooked duck.

Just a report my small and simple honey glaze ham turned out alright,think it could have done with being soaked for longer though as it still reminded me of gammon(slightly salty),unless I'm being thick and it's meant to be like that.
