Vegetarian main for one?

We've got a vegetarian coming for Christmas dinner, does anyone have any suggestions for something that can be prepared and put in the fridge on Christmas eve ready to put in the oven on the day?
I was thinking of a mushroom and Mediterranean veg wellington sort of thing? But wondered if the pastry would go all soggy by the time it's cooked.
I'm happy to make an effort and didn't just want to get a ready made nut roast or quorn fillet!
Any recipes to steer me in any direction?!

The veg Wellington dh makes me is lentil & rosemary and goes well with roast veg.
Basically onion , lentils, stock and rosemary but I've no ideas on the cooking bit Blush

I have tried umpteen things over the years for DD, and what she actually likes - and asks for every Christmas - is the basic Quorn Roast.
Its depressing, when there are interesting things to do, but what she wants is something which just foes git with all the trimmings that everyone else is having. Nothing marries with those flavours better than the Quorn Roast (apparently).
Before you tie yourself in knots, I would check with your visitor in case they feel the same way!

We go for making a lovely onion, mushroom and red wine gravy. Served with Yorkshires and all the trimmings. Yum yum...

nut roast with cranberries looks good. We have lots of people for Christmas 15-20 depending on who shows so I tend to have a vegan nut roast available which most of the meat eaters treat like an extra stuffing. My mum and sis (big meat eaters) ask for it now.

I do the roast potatoes in oil rather than meat juices and do a boozy mushroom gravy.

HaveAFestiveLittleChristmas she doesn't eat quorn stuff normally (we've had her round for dinner in the past) so am reluctant to do it for her now! I also don't want to ask her and make her feel like she's a difficult customer, would just like to have something nice prepared in advance.

The lentil and rosemary one sounds nice too.

Hermy, do you do that as a wellington, or as roasted veg on it's own?

Mis thankyou, it looks a bit big for 1! and the rest of us wouldn't eat it.

We are having roast beef with all the trimmings, including a meaty gravy, so will need to make a separate gravy too. Hadn't thought of that.

Hmm, will ponder on it some more.

If you're all having beef and trimmings and definately want a just for one option what about a moist mix from mushroom wellington but instead of a pastry crust serve the mix in a decent sized yorkshire. You could cook it in advance and then just microwave/ warm in a saucepan to serve in the out the oven yorkshire. Plus have all the other sides with everyone else and wouldn't need an extra gravy or gravy boat because the sauce would be with the wellington.
