Festive drink to 'use up' champagne...

I've got 2 ancient bottles from out wedding and another couple of bottkes of fizzy wine from a year or so ago. We don't really like fizz, apart from Buck's Fizz what can I do with it? A cocktail would be good but ideally I don't want to add any more alcohol (BFing so trying to moderate!)

Any ideas?

Bellini's? I think you just add peach juice for those. Or Kir which is champagne and cassis (I mean the really good quality blackcurrant syrup rather than alcoholic creme de cassis but you can use that too for Kir Royale).
It's also nice with pomegranate juice.

Perdita. Kir and kir royale are both normally made with creme de cassis ( or other flavours too in France) though. I have had it made by accident with black currant cordial (not high quality) in a bar before, and I sent it back as it tasted disgusting.

To the OP, if you don't really like it why not share the bottles at a dinner with people who do like it? Then you get to feel you're drinking some but it will also be appreciated.

Bellinis sounds good, will look out for peach juice.

And sharing sounds good but we just aren't having anyone round who likes it. All out family are quite fussy or don't drink. There's a chance the wedding champagne won't be any good too, so will need to have a taste first.

It would be quite funny to make 'ribena' kir royale ;)

50/50 with pomegranate juice - called a poinsettia iirc. Beautiful Christmassy colour and flavour.

Nigella's poinsettia cocktail uses cranberry juice.

Since holidaying in Italy I have become a huge fan of Aperol spritz

poo - you are right re poinsettia - I misremembered. fizz and pomegranate lovely, as is fizz and cranberry as per Nigella - don't think we bothered with the extra alcohol when I made them :)

Aperol spritz is great: 2 parts aperol, 3 parts fizz, one part fizzy water and rather brilliantly (I am also breastfeeding and discovered this while pregnant) has LESS alcohol than plain fizz as the aperol is low alcohol and it's topped up with fizzy water.

Also a dash of gingerbread syrup (eg monin or any coffee shop syrup) for "christmas in a glass" a la Nigella.

Or a dash of pomegranate molasses & seeds, or a larger dash of pom juice & seeds

Get some hibiscus flowers in syrup. Added to a glass of fizz it adds a lovely sweet flavour.

Another vote for Aperol spritz! Hibiscus flowers were my greatest disappointment of Christmas 2011!

i plan o get a bottle of lillet which is an ornage infused tonic wine, it is delicious with gin and would be equally awesome with fizz. I cant wait! was very pregnant last year and have spent most of this year breastfeeding my twins but they are weaned at night so come 7.20, bring on the cocktails chez FBB!
