Christmas ham without coke?

Does anyone have a delicious ham technique I could steal that isn't ham in coke? I recently had the most amazing ham that just melted in your mouth, but could not get the recipe. I have made ham in coke before and wasn't keen. Thank you

Ok really simple question that would help me, when you boil it I assume you cover the joint with water? Rather than just a bit?

Slow cooked in ginger beer with tangerine is our choice this year.

I cover it with water, if it floats a bit , I just poke it down during cooking.

I just stick mine in the slow cooker for ages and then roast it in a blistering napalm-hot oven with some sort of glaze (usually 1/2 tbsp of mustard powder and 6 tbsp demerara sugar with a pinch of ground cloves made to a paste with some orange juice)

I think brown sugar and mustard this Christmas. If that works I am liking the sound of trying out the other ideas ( but not coke one!).
