Turkey dinner plus 1 vegetarian meal

TeenAndTween · 19/11/2013 14:42

It looks like this Christmas I'll be needing to do the usual turkey dinner for 7, but with also an additional vegetarian meal for someone I've never met (brothers GF).

Can people please suggest something simple but nice that can be cooked in parallel to a full christmas meat-fest lunch (or pre-cooked and then microwaved) (or pre-bought from M&S etc). We are not going to not have a turkey for the rest of us (already ordered anyway).

So far I have got for options:

  • baked salmon
  • um.. that's it.

Thanks

I've vege. I always have normal Christmas dinner but swap the turkey for nut roast. It can be made a few days before and kept in the fridge so won't be another thing to worry about on the day.

pumpkinkitty · 19/11/2013 14:48

I'm not I've!

pumpkinkitty · 19/11/2013 14:49

Oh and if she's proper vege she won't eat fish (I don't)

Isildur · 19/11/2013 14:49

Your vegetarian guest will NOT want fish Grin

exexpat · 19/11/2013 14:51

If she's vegetarian, please don't give her salmon, unless you are sure she is actually not a vegetarian but someone who just doesn't eat meat (but does eat fish). I have been vegetarian for nearly 30 years and have lost count of the number of times I have been presented with fish, which vegetarians do not eat. It is embarrassing and difficult all round.

If you look at the Christmas food offerings from places like M&S and Waitrose, you'll probably find something nice that will do as a single-serve meal for a vegetarian, or you could do some kind of tart/loaf/puff-pastry wrapped thing that would also do as part of a cold boxing day meal along with everyone else's cold turkey. The BBC website has lots of veggie Christmas ideas, or something like a mushroom wellington (recipes all over the internet if you google) or a mushroom strudel is very easy.

Methe · 19/11/2013 14:54

I'm making the bbc Mushroom Wellington for my sister for Christmas dinner. It looks so nice I'm tempted to make myself one too!

exexpat · 19/11/2013 14:55

M&S has a ready-made mushroom wellington and their nut roast looks nice too.

exexpat · 19/11/2013 14:56

(oh, and if you cook the roast potatoes etc in animal fat, it would be kind to tell her before she helps herself to them)

Isildur · 19/11/2013 14:57

I did a trial run of mushroom wellington, which was just as well because it was grim.

I think you should ask for suggestions from the guest, in an 'any special requests?' kind of way.

Don't roast the potatoes in goose fat/lard, avoid mixing bacon with the sprouts etc.

Theimpossiblegirl · 19/11/2013 14:57

I always do a Quorn roast. I cook it ahead of time, then slice it and put it in a small baking tray covered in veg gravy. This keeps it nice and moist and can be reheated. You could add some vegetarian stuffing too.

exexpat · 19/11/2013 14:58

Which recipe did you use, Isildur? All the ones I've had have been good. Some need a good sauce to go with them, if the filling is more solid (eg some use nuts along with the mushrooms).

SugarplumKate · 19/11/2013 14:59

I would do a ready made M & S something or other to go with the rest of the roast (this is what I'd like to eat as I love the roast potatoes/other veg). Just make sure you have veggie gravy and you are all sorted, no hassle.

She won't eat fish if she's a vegetarian (as opposed to just not eating meat like me!)

TeenAndTween · 19/11/2013 15:01

She does eat fish. Doesn't like quorn.

The mushroom wellington looks nice and it says they can be prepared in advance, so that's possible I guess.

I want to make an effort, but not give myself extra stress on the day.

It was this one exexpat

I veganised it, and added a few cranberries for a festive twist, but it was grim.

Crutchlow35 · 19/11/2013 16:24

Make sure your roast potatoes are not cooked in any animal fat.

Margetts · 19/11/2013 16:28

I make a white Stilton, cranberry, apple and port filopastry pie which can be made in advance.

magichamster · 19/11/2013 16:33

Have a look in m and s. Every year I do a turkey dinner for the family and I just have something from m and s with the same veg everyone else is having - roast potatoes are done in veg oil rather than lard. I do eat a bit of fish but never think it goes very well with a roast dinner.

TeenAndTween · 20/11/2013 20:32

Thanks everyone. I need to go and visit M&S I think.

I don't need to worry re roast potatoes as I don't do them for Xmas.
Will ensure it is vegetarian gravy.
will do veg sausages if I can find some.
Will try to do something that will go well with bready sauce!

I'm vege. To go with a roast I do stuffed flat mushrooms. Very easy and can be prepped in advance. Chop stalks off mushrooms ans finely chop. Mix with breadcrumbs, enough butter to bind, garlic and lemon juice to taste. Fill mushroom cups with the mix. Grate a bit of cheese on top. Bake for 15-20 minutes.

I do enough that I can have two and meat eaters can have one as a side.

I think the original recipe is from a book called "From Anna's kitchen".

pancakesfortea · 20/11/2013 20:40

If doing veg sausages my favourite are quorn. They're genuinely quite nice - my meat eating kids eat them. Only thing for a posh meal is that they don't look all that.

pancakesfortea · 20/11/2013 20:42

Sorry, just seen she doesn't like quorn. Other thing I do is filo parcels. Stuffed with mushrooms, chestnuts, bit of cream, bit of white wine.

70isaLimitNotaTarget · 20/11/2013 20:55

If she eats fish Teen then do a foil baked salmon portion for her with a sauce to go over (watercress maybe)
DH and I are vegetarian (we have a Quorn Roast. Christmas Day is not the day to do anything complex) and with all the accompaniments she'll have lenty of choice.
(My DC aren't vegetarian, they have a roast chicken breast each)

Earthymama · 20/11/2013 21:05

Sorry but you cannot have salmon and gravy.

Speaking on behalf of many vegetarians, me and DP included, I will not go to a pub or restaurant that does not offer meat-free gravy as part of the package.
And goats cheese!, who the actual fuck wants roast dinner with all the trimmings and GOATS CHEESE!

There are loads of nice ready meals or if you like to cook, Rose Elliot's Mushroom and Chestnut en Croute is great. Or naice veggie sausages or a pie.

Just not fish. And gravy. No.

TeenAndTween · 21/11/2013 09:56

Thanks all.

I also think not fish and gravy.

I like the idea of mushroom something and/or something en croute / pastry, as they will go well with the rest of the meal. I will also research vege sausages.
