Preparing Christmas Veg in advance and freezing

Hello
I know people who do their Christmas veg (parsnips, roasties, sprouts and red cabbage) all in advance and freeze then just re-heat on the day. Has anyone done this and can recommend and also, how do you actually prepare them and reheat? Thanks

I've done sprouts - not for Christmas but just generally. I peel and then drop them into boiling water. As soon as the water comes back to the boil, time it for a minute and then whip them out and straight into iced water to stop the cooking. Then drain & freeze.
To cook, I treat them the same as raw.

Red cabbage you can cook fully (I like the Delia one) and then freeze. All you then need to do is reheat.

I've frozen fully cooked red cabbage and just re-heated (nigella recipe, using stock from a Christmas ham).

This year I'm going to par boil the potatoes, fluff them up, freeze, and then put in the oven to cook from frozen.

I might also blanch some root veg and freeze them and again cook from frozen in the oven.

I'm doing this this year. I've already frozen delias cabbage and some roasted leeks (to mix with cream and Parmesan and bake) at the beginning of December ill par boil potatoes, parsnips and sprouts for roasting. I'll also make the cranberry sauce and freeze that. Hopefully it will make it easier!
