Christmas baking- what's that all about?

I've seen loads of posts about people who have already done their Christmas baking and am very impressed but a bit puzzled.
What do you mean by that? I've done my cake, it just needs watering over the next few weeks but what else have you done that will last 2 months?
I am seriously in awe of how organised some people are before Christmas and fancy giving it a go. Most of mine end up frantic trips to Greg's on Christmas Eve for the 3 remaining mince pies.

Some people make their puddings about now don't they? Puddings I think are better the longer they mature, cakes you can get away with less. Mince pies? I've frozen some gingerbread dough, but its a bit of an experiment at the moment, I'll do some practice gingerbread men before xmas to make sure they taste ok!

I don't do it but mince pies freeze really well.

Christmas pudding and cake. Pastry to freeze perhaps?

We have to bake quite a bit as DD1 is intolerant to various things so I like to make sure I have a stock of food she can take to parties. I make mincemeat every two years (lasts beautifully) and a few dozen mincelies ptty early oninNovember, we don't have a steamed pudding but we do make cake.

This year I'm hoping to host a few parties so will do some more pies and baking of meals in advance.
