Don't want to hijack someone else's thread with my goose related waffle. So.....

  1. Has anyone ever cooked a stuffed goose crown, or a stuffed whole goose and if so, what was it like?

  2. What do you serve it with in the sense of beef = horseradish, turkey = cranberry? Suggestions seem to be apple sauce, which seems wrong to me as it's a pork accompaniment and goose is nothing like pork. I was thinking of making some kind of smooth plum chutney effort?

We quite often had a goose when I was growing up. My mum stuffed it with...sausagemeat? I think? And chestnuts? It was delicious and brown, sorry I can't be more specific. I love goose, but they are so fatty it is probably quite uneconomical - we tended to have a goose for the family, enough leftovers for one more meal each and that was it. Not like turkey where you have loads left...

We just have ours with traditional Christmassy bits - cranberry, bread sauce... It is rich, so something slightly acidic (like cranberry, or red cabbage) is nice to cut through it a bit.

We do a little Christmas here, then a BIG Boxing Day, and rest of the celebrations are in other house abroad. Tonnes of turkey leftover is a pain in the arse for us, as any leftovers get chucked.

I was going to have it done with the usual sage/onion/sausagemeat....do you think I need a more punchy stuffing?

Ooooh I could do like a red cabbage pickle and a sweeter plum sauce?

No, I think the usual one would be lovely. Red cabbage and a sweet sauce both sound lovely too.

I'm hungry now... Goose sounds ideal if you don't want loads of leftovers. Remember to keep the fat to make potatoes/confit things!

Wonderful :) I'll get the full bird stuffed with traditional stuffing then. I'm soooo excited about it, we just always have a turkey and I'm always the Christmas Day host, so never get to play with a fun Boxing Day menu. Itching to get the order to the farm!!! I need to get out more Grin

We've had goose for the last few years. I've used this Delia recipe, which has worked well for us.

The fat makes for delicious roast potatoes, too.

I really really want to have goose this year. I've never tried it though. Will I like it? Does it taste like duck or something else?

Richer than duck, but quite similar. Dilly, be a first time goose cooker with me, and we can share our "how we fecked it up" stories after Grin
