Homemade presents - how early can you start making them?

I'm specifically thinking jams and chutneys. I'd like to start making some of them now as we have a glut of courgette and rhubarb. However, I am worried if I make them into jams/chutneys now that they won't keep until Christmas.

If you sterilise the jars properly and fill them while the jam/chutney is piping hot they'll be fine. The whole point of preserves is just that - to preserve stuff. If you don't mind forking out a bit, Kilner-style jars look attractive and have a good air lock. (Sainsbury's had them on offer a few weeks ago and I think Ikea do a cheaper version.) For chutneys it's important not use metal lids as the vinegar corrodes them which is not an attractive look in a gift! (Metal lids lined with rubbery stuff are fine.)
We always label them with the date they were made so the old ones get used up first and keep them in the fridge after opening. Chutneys seem o last forever, but jams may get a bit off mould on top if left too long after being opened (although I was brought up to scrape the mould off and eat what was underneath and seem to have survived).

Me, too, but I think my H would've fallen over in a dead faint if he had seen me do that. (So I made sure he was never in room Grin) Spleeny little wimp. Hmm

Many chutneys actually improve with keeping. I usually do a mango chutney during the summer, and some jam depending on what fruit is available. Apple chutney in the autumn (ILs have a few big trees), plus marmalade. That way, we have a nice selection to give people over Christmas, as well as sloe gin and damson gin. I usually use nice labels/jar toppers too - makes it look pretty.

spleeny little wimp love it!!! My dh is the same....

Flavoured alcohols etc are best as early as possible chutneys too. There are some lovely recipes and ideas on Pinterest (was surfing last night for aaaaaages!)
