If you prep your xmas dinner veg on Xmas eve, do you leave it at room temp in water overnight, and if so does it keep OK, or do you keep it in water in the fridge?

I have done my fresh veg on Xmas eve before & it does keep!Xmas Grin I put it in the saucepans with water in & lids on top of the stoveXmas Wink
I just put fresh water in before cooking on Xmas Day!

I read mary berry say that veg in water is fine overnight except for sprouts or green veg which lose their flavour and colour in the water x

No, no, no. Soaking veg in water leaches out most of the nutrients, unless they are carrots as vitamin A is fat soluble.

I always wrap my veg up in freezer bags and put them in the fridge. They don't dry out and they keep more of their nutrients.

I parboil my potatoes and put them in the fridge when cool.

Veg: carrots, mashed swede, sprouts, parsnips, roast potatoes

I have just made some bread sauce as well.

Mine's all done and in the fridge apart from the spuds that are on the stove. We're having roasties,sprouts with sage butter and chestnuts,carrots,swede purée and broccoli. Meat eaters are on turkey and DD,DS's and myself on a nut roast.oh and stuffing balls and yorkies. Homemade Chimbo pud and custard for afters. Whatever you're having, enjoy it and be merry x

If I'm roasting them I put them into self seal bags with the herbs, garlic and oil in the fridge. They'll keep for a couple of days ok.

I prepare the potatoes and carrots and leave in cold water, room temp, peel the sprouts and put in a bag with no water room temp, parsnips done just before cooking. Do this every year and it's fine.

Forgot the bread sauce and parsnips! Personally, bread sauce in a bowl on it's own would suit me!

Why didn't I think of yorkies?! I must have them now.

We're having apple sauce too. Is that normal or just us (we had an orchard when we were kids, so millions of cooking apples)?

My theory is that for one day of the year it doesn't matter if we lose some nutrients. I leave mine in water as my sanity is more important than optimum nutrition!

I agree VITM. Usually very careful regarding cooking of veg but one day won't do any harm. Yorkies are my favourite part of the dinner along with the bread sauce.........bread sauce dip with yorkie dippers maybe. Not sure the rest of the family would be happy.

But they don't need to be kept in water. Only potatoes do if they haven't already been parboiled.

You could wrap them in damp kitchen towel instead.

So my turkey is defrosting, brussels and roasting veg prepared and bagged in the fridge, spuds in a pan of water on the balcony. Santa's been and the mince pie eaten. Snoring from littlemoomin.
