Red cabbage
Red onion
Red wine
Balsamic vinegar
Sultanas
Clear honey

Simmer for a couple of hours.

Delia smith has a recipe for caramelised balsamic red onion and goats cheese tarts in the vegetarian collection book. Basically you cook a kilo of finely sliced red onions in butter and balsamic vinegar (not sure of amount) for about 40 mins. I use ready made puff pastry cut into individual tart size squares, top with the cooked onions and a slice of goats cheese and bake.
They're yummy - we're having them for starters on Christmas day.

I always make double the quantity of onions as they freeze well in small portions and are good to serve with sausages, on pizzas, in stews etc

You can always slice or chop them and then freeze, great timesaver next time you're making sonething that needs onions!
I use red onions instead of white in most things - stir fries, curries ( especially Thai), pasta sauces, casseroles etc. and they are very nice in salads too

Roast red onions are nice. IME red onion tarte tatin takes loads of onions, far more than Nigella says.

I agree with whoever said to just keep them and use them gradually. Put them in the shed - they'll last for months. I do this, although with white onions. And potatoes too, actually.
