Vegetarians -what are you having for your Christmas lunch/dinner

This year there is only myself, DP and DS (6yr old) for Christmas lunch. We're all vegetarian and I'm looking for some inspiration. DS doesn't like nut roasts and is funny about certain textures and DP isn't a big fan of pastry. Oh, and I don't like Quorn products. Not fussy at all eh?!

it's lovely, it's that dare i say 'cauldron meaty bit' that makes it different from nut roast i think. bit of chew.!

it is hard to bind together, as the sausages don't have the fat, but i just brown it all to oblivion in the pan. tastes lovely.
you can use those vacuum packed chestnuts too. i guess you could also put sunflower seeds in it, they are a nice texture.

I am veggie and on Slimming World! I'm having roast spuds, roast onions, sweet potato, beetroot, celeriac, jerusalem artichoke and parsnips. All roast in Fry light.

I have 12 for christmas lunch, 3 including me are veggie, dh will do turkey for the meat eaters and I will do veggie option and everything else. In previous years I have always made cranks mushroom wellington ( really easy, delicious and can be made ahead of time and frozen), this year I am going to make Lorraine Pascal's veggie nut roast pie (on bbc food page), a friend made it recently and it was yummy and then all the trimmings.... she froze it so I am going to make it this afternoon and then freeze it so all I have to do is get it out on christams eve as it does look a bit fiddly and I don't want to be making it on christmas morning..... I will let you know how I get on, the pics on the website look great but that is not to say mine will look the same!!

The chestnut mushroom Wellington is yummy but I've made it a lot! I don't like meat substitutes so will be making stuff from scratch. Like the sound of the veggie nut roast pie and the risotto balls. Mmmm.

Just looked at the veggie nut roast pie recipe and you could make it with bought pastry if you don't have much time - with or without a lid. You could also use the filling to make a festive nut roast.

Just found this recipe for risotto balls with mozzarella and baked beans!

What sort of thing do you normally like to cook/eat for a special occasion? There's no reason it has to be a vegetarian 'version' of the traditional roast, especially if you're not having meat-eating guests.

(I would have pizza if it was up to me. However I will be having nut roast...)

just marking my place, would love recipe links for tarts! I am not veggie but my mum is, and always neglects herself when making family dinners, so i would like to take something nice. not curry that is too normal!

I've cooked roulades, wellingtons, pies, quiches etc. DP and DS are fussy. I'll eat anything apart from meat substitutes so not fussy at all! Xmas Wink

Found a baked risotto ball recipe here. We all love risotto so these should do nicely for dinner and nibbles for the next day.

DP and I love nut roasts so I'll make a stonking festive one which we can also eat at other times.

Add a huge heap of veggies, roast potatoes and gravy and that's us sorted.

Now, what about pudding? Argh!!!! Xmas Grin

Tarts:

You could score some puff pastry and part cook it. Meanwhile roast some slices of butternut squash and some halved shallots. Spread the part cooked pastry with cream cheese or marscapone into which you've stirred some pesto and some finely chopped spinach. Arrange the squash and shallots on top, sprinkle with a bit of sage and some parmesan then shove back in the oven until golden.

Or the same idea with maybe some sauteed garlic mushrooms instead of the squash and shallots.
