Celeriac - what do you do with it? (Christmas dinner)

I see it mentioned from time to time and I think I'm missing out. What do I do just mash it? With butter?

Or roast it?Confused

I love celeriac.

We do roasted celeriac, celeriac and stilton soufle, celeriac soup, and celeriac salad (various) - I don't ever bother to mash it as I'm quite happy eating it without that hassle, and I like its texture anyway.

That souffle sounds very good. And salad; you just eat it raw?

I love celeriac! Soup is good, mashed with potatoes, butter, milk etc, or grated raw with mayonnaise and seedy mustard (celeri remoulade), but the latter is more of a salad thing for summer IMO. I have one in the fridge actually - thanks for reminding me.

Celeriac remoulade is a great starter. V good with parma ham.

Actually if you search on 'celeriac' on that website it comes up with tons of ideas.

Chop it into thickish slices or chip shapes if easier, layer in a roasting tin with an obscene amount of roquefort cheese, pour over about 300ml double cream, roast for about 45 mins. Absolute heaven.

Obviously you can only cope with eating plain undressed lettuce for a week afterwards, but it's totally worth it!

DH does a fabulous dish with it, it maybe a Jamie recipe.
Chop into cubes and simmer in stock, add few flakes of dried chilli and roughly mash so still but lumpy but mushy. Think that is all that's in it.
It's my fav.

DH says its a River Cafe recipe. Dice the celeriac, sweat it in some olive oil with crushed garlic, some chilli flakes and thyme leaves. Then simmer it in stock until tender, but not too much or it will be too wet. Then crush with a masher. DD has always eaten it too but without the chilli. Great comfort food. Yum!

HFW does a celeriac and chilli gratin which is absolutely gorgeous. It is the only HFW I have ever done and liked.

I'm with Santa - a gratin-y thing is nice, or remoulade. But try cooking it as a tester before the big day, because although it's nice, it is a bit tricky - it's easy to end up with it over-wet and horrid.

I don't get a veg box and have still managed to end up with three huge specimens of celeriac this week as DH saw they were reduced to 5p each.
