For the first time we are staying home for Christmas and having people come to us and I'm cooking which I'm both excited and quite daunted about. Apart from turkey, what makes up your christmas dinner? I'm all about trimmings and would love to know about even more lovely food and how to cook it. so far i'm thinking

turkey
chipolatas wrapped in bacon
roast pots
carrots
some form of green veg
possibly sprouts
cranberry sauce
some kind of stuffing
bread sauce
gravy (never made my own before, determined to do it this year)

i'd also like to do a ham too....

any recipes or other things to add to my plate greatly appreciated.

I like goose but there's never enough meat for all of us. This year there may be fewer of us so may indulge.

Otherwise it is the standard turkey and also a Quorn roast for DH. I make two stuffings- an American cornbread one and standard sage and onion.

Sprouts with bacon and chestnuts plus non bacon version for DH.

Home made cranberry dressing from our cranberries off the allotment.

Giblet gravy and we always have Yorkshires with every roast as adore them so.

Roast Hasselback potatoes- crispy to the nth degree.

Home made Plum pudding with custard or brandy butter.

DH makes a Creme De Menthe Roulade every year- there'd be an outcry if it was missing.

DowntonAbbess · 08/11/2012 10:27

Thanks teacakes. Shall do that this weekend then freeze. Am so pleased the cabbage won't be going to waste!

StripeyCircle · 08/11/2012 10:47

Olbasoil- what are kilted sausages? Great name, whatever they are!

And I forgot the spicy red cabbage. If I'm organised I do it a couple of days ahead to let the flavour get into it.

But here's a question - how many people actually eat the Christmas cake on Christmas Day? Most years it ends up sitting there looking nice, but isn't touched until Boxing Day as we're all too stuffed to eat anything else. And another tip - try it with Wensleydale. Yummy!

steben · 08/11/2012 10:51

We usually have goose or beef - last year I did sirloin and it was amazing. I also always do a ham in coca cola a la nigella and we have the leftovers for Boxing Day breakfast - ham and fried eggs with left over fried mash potatoes A MA ZING

tipp2chicago · 08/11/2012 11:16

Starter: Tournafulla Black Pudding w Sautéed Apple, salad & honey-mustard dressing

Main:
Nigella's brined turkey & gravy (crown from Aldi)
Glazed Ham (previously boiled in Bulmers cheap cider)
Roast Potatoes
Potato & Sausage Stuffing (courtesy of DM - only thing she's really able to do well)
Roasted Carrots & Parsnips
Brussels Sprouts (hate em, but due to popular demand...)

Dessert:
Haven't figured that out yet. I'm the only one who likes Christmas Pudding. Nobody likes Christmas Cake. Maybe a trifle? I'd have to find a bowl for it though. Maybe MIL would make it for me.

Sounds like a pain in the ass, but thankfully I do most of the prep on Xmas Eve so not much to be done on the day itself.

Greensleeves · 08/11/2012 11:21

Turkey and one other meat (venison this year)
pigs in blankets
stuffing balls
carrot and swede mash with loads of butter and sherry
roast parsnips
roast potatoes
sprouts
gravy
cranberry sauce
sauce for the other meat (with venison probably horseradish and mustard)

christmas pud with cream and brandy butter
kids will have a bit of pud but will choose some other non-alcoholic pud as well
choc mints
brandy (to anaesthetise our aching stomachs)

Olbasoil · 08/11/2012 11:36

Kilted sausages are sausage.and bacon . I can't remember why I call them that , but I always have !
Forgot to add chestnut stuffing to our list, made with frozen chestnuts.

Blu · 08/11/2012 16:12

DowntonAbbess red cabbage: cooked slowly with apple, some people include sultanas but I hate that, some vinegar and sugar and some spices and onions. Red cabbage needs to be spicy and intense - I've never had it just boiled. Lots of recipes on the 'net.

Blu · 08/11/2012 16:13

Delia's red cabbage here

DowntonAbbess · 08/11/2012 16:15

Thanks so much. I suspect I'll be inundated with red cabbage in the next week or so so shall try all these recipes out and freeze the best for Christmas. Yay!

anklebitersmum · 08/11/2012 16:27

We do either a large goose or wild ducks for Christmas. Usually stuffed with a combination of stuffing and sausagemeat so there's a little more meat going.

Roast potatoes
Roast parsnips
Roast beetroot
Red cabbage (balsamic vinegar & brown sugared)
Carrots (normal and purple)
Sprouts
Bread sauce
Stuffing
Gravy

Pudding is usually ice-cream for the kids and we do Christmas pud later on because that way it's appreciated more (and you don't have to roll me away from the table Wink)

Blu · 09/11/2012 10:31

Downton I love pickled red cabbage too - a plate of cold meat, or a shepherd's pie isn't the same without some crisp pickled red cabbage!

Jeez Summyb, I feel stuffed just reading your post! 😁

PinkGinFreak · 22/12/2018 13:51

I've just realised this post is a year old!! How did that happen?!

Fantail · 23/12/2018 04:32

Christmas dinner is just myself and my Mum and Dad. I’m cooking (I work part-time as a private chef).

We are having:

  • Roast beef strip loin with roast potatoes and parsnip
  • caramelised fennel with goats cheese
  • Green bean salad with mustard seeds and tarragon

Then cheese board and Christmas themed petit fours for afters

May whip up a starter, but I’m not sure.

We are in NZ so salads fit with a summer meal.

Beef recipe is from NY Times and vegetables from Yotam Ottolenghi’s Plenty

Auntiepatricia · 23/12/2018 10:13

Starter is champagne, homemade brown bread and smoked salmon

Then
Turkey, ham, pigs, yorkies, roasties, roast carrots & parsnips with truffle and parmesan, sprouts with panchetta and red onion, gravy, bread sauce, cranberry sauce

Desert
Mums chocolate cheesecake
Christmas pudding (mums, its amazing) with whipped cream and brandy butter
winter fruit compote with creme fraiche

Then port and cheese out on the table

We have wines paired with each course too.
