Christmas dinner

What veg do you have with your Christmas dinner?

I'm thinking sprouts with chestnuts and pancetta but also really like roasted parsnips?having traditional turkey, ham, roasts, pigs in blankets and stuffing.

Is two veg too much?

Brussel sprouts with chestnuts, red cabbage, roast parsnips, honey carrots. Pomme dauphinoise, roasties and about 4 different stuffings courtesy of MIL, now I'm excited about Christmas!

FoxSake · 22/10/2012 16:45

I need the parsnip puree recipe, sounds yum!

ChestyNutterStaringInTheWindow · 22/10/2012 16:45

COR I need bigger plates Grin

LOL - can see why there's so many meltdowns at Christmas... when do you get time to enjoy the day - we have fresh carrots and frozen green beans and sprouts - and I might just chuck some ready cut in a bag carrot and parsnip batons under the turkey...

FoxSake · 22/10/2012 16:50

No strife here and I love cooking, all prep and stuufings done before, cabbage in the slow cooker just boil the sprouts and cook the roast veg on the day.

TeaOneSugar · 22/10/2012 18:32

We're having mashed and roast potatoes, honey roast carrots, parmesan parsnips and broccoli and cauliflower cheese.

Tuppence2 · 22/10/2012 18:40

We have:
Mashed and roast potatoes
honey roast carrots and parsnips
peas
sprouts with pancetta
cabbage
swede
broccoli
cauliflower cheese

Mam does enough to last through to Boxing Day so she doesn't have to cook any more veg when dad has his 2nd Xmas Dinner

ZeldaUpNorth · 22/10/2012 19:58

I do carrots, mashed turnip, brocolli, cauli, cabbage, roast and mashed pots oh and sprouts. Along with pork and chicken (not keen on turkey) stuffing, piggy in blankets and Yorkshire puds. I'm the only one who likes parsnips so not worth doing. For starters prawn cocktail and dessert gateaux (just a frozen one) and cheesecake. I love Christmas dinner.

bedmonster · 22/10/2012 21:01

Where is OP? I want to know if you've changed your mind!

ChristmasKate · 22/10/2012 21:29

Roast potatoes
Honey glazed carrots & parsnips
Pan fried Brussels leaves with pancetta
Creamed leeks
Mashed swede and carrot
Cabbage

Have never had cauli cheese with christmas dinner but everyone loves it and it reheats well. I have 4 days off work and don't plan to cook again in between the day and my day back to work.

OtterPandemonium · 22/10/2012 21:40

If anyone has beef for Christmas lunch - I know! But I have heard that some weirdos people don't like turkey - parsnip and celeriac mash is the best. Cut both into chunks and boil in milk for 20 minutes, then mash with butter and black pepper.

You can use the milk as a base for a creamy, chowdery soup the next day, after a brisk Boxing Day walk, and before collapsing on the sofa with a tin of Quality Street.

ChristmasKate · 22/10/2012 21:54

We have turkey, gammon AND beef on offer for Christmas dinner and then cold cuts for the next 3 days.

I love pan fried Brussels, could never go back to boiled and soggy although I have fond memories of them as a child!

bedmonster · 22/10/2012 21:57

Beef and goose here, lots of yorkies, pigs in blankets and all that lovely veg to balance it out. Followed by an intensive week on the treadmill!

AudrinaAdare · 22/10/2012 22:24

FoxSake, no real recipe I'm afraid. I just boil parsnips, mash with butter and anything I fancy really - usually cream, black pepper, nutmeg and orange juice. Tasting frequently until I have eaten half of it just right.

I don't really like meat but make an exception for DH's Christmas chicken so I do love a good accompaniments thread!

follyfoot · 22/10/2012 22:28

We have sprouts with bacon, maple syrup 'snips, roast potatoes, glazed carrots and red onions, red cabbage, broccoli.

Re-the Delia Parmesan Parsnips. She has it in her vegetarian collection (and in tiny writing about vegetarian parmesan)

I bought some Vegetarian Parmesan type cheese (IIRC it was the basics/value range Sainsburys).
It hasn't got a load of flavour TBH.

DH and I are vegetarian so we have a Quorn Roast as the 'main' part (DC have chicken).
Then:
roast potato (in sunflower oil)
roast parsnips
swede/turnip, cooked and pureed with black pepper
carrots
brochilli (tender sweet is nice)
sprouts- Compulsary <img loading="lazy" class="inline-flex mumsnet-emoji" alt="Grin" src="https://www.mumsnet.com/build/assets/grin-D7Eg_B6y.png">
steamed green cabbage

And Yorkshire Puddings- or else there would be mutiny from DS .
OohMrDarcy · 23/10/2012 12:14

I tend to go for variety of veg rather than mounds of it so normally do about 6 at christmas

swede and carrot mash
carrots
braised red cabbage
honey roast parsnips
brocolli / peas
roasted butternut squash
and sometimes cauliflower cheese too

Turkey, gammon, sausages wrapped in bacon, sausagemeat chestnut stuffing, breadcrumb apricot, sage and onion stuffing, roast potatoes, roast parsnips, cheesy leeks, broccoli, sweetcorn, carrots, bread sauce, giblet gravy.

TheFallenMadonna · 29/10/2012 19:02

Oh, and sprouts this year as in laws are coming...

NoSoggyBottoms · 29/10/2012 19:14

Will be having:

Roast potatoes
Honey Roast Potatoes
Roast parsnips
Carrots
Broccoli
Cauliflower
Brussel sprouts

(then turkey, honey roast ham, sage and onion stuffing, sausagemeat stuffing, pigs in blankets)

Extra veg needed at Christmas - great for Bubble and Squeak the next day Grin

JobCarHouseNoBaby · 29/10/2012 19:19

Roast parsnips, sprouts with pancetta and chestnuts, carrots with orange juice and rosemary = minimum

Optional extras = peas, cauliflower cheese, roasted root veg (everything else plus parsnips)

Plus

Turkey
2 types of stuffing
Pigs in blankets

mrsmplus3 · 29/10/2012 19:33

I don't think 2 veg is quite enough but just do whatever suits you and your family.
When I'm cooking the Christmas dinner I do sprouts, carrots and roast parsnips for sure. My pil loves peas so if he's around they get made too.
I keep turnip and mushy peas for New Year's Day (Scottish) Smile
