Anyone love Chestnut stuffing as much as me?

OMG I am absolutely nuts about Chestnut stuffing Grin Half my plate is packed with the stuff as it is so delicious Grin

Does anyone else love it as much as I do?

Me too. I make mine from scratch with crumbled bread, crumbled vacuum packed chestnuts, fried onion and diced bacon, seasoning, and fresh chopped sage, parsley and thyme with a little hot water to make it stick together.

Do you know that you can fry leftover stuffing to eat with your leftovers, cold meat etc.

I've never tried chestnut stuffing, as I've had rotten luck with anything chestnut related that I've tried in the past.

I do love my mothers sage and onion stuffing though. I don't have much luck with making that either, but the aroma of sage and onion on Christmas Eve is very evocative.

Stuffing and sprouts are my favourite bits of Christmas dinner. And those little clementines, with the leaves still on.

Where's the best place to get chestnuts? Or what type is best? I've ever bought them.

I am too lazy/Crap to actually make my own stuffing do I just use Paxo but I always add hazelnuts and dried apricot to it :)

You can buy them in supermarkets ready-to-use in jars, or vacuum-packed in boxes. I bluddy love 'em.

My recipe:

Just combine all the ingredients in a food processor, then put in the oven (I put mine in an uncovered cake tin) on gas mark 6/200C for 30 minutes :)

I've never tried it, actually never heard of it. Does tesco sell chestnuts all year round? I might try it this weekend, weather is exceptionally grim so going to make a roast of Sunday.

Yes, Tesco sell those chestnuts in a jar all year round. They are found by the spices/rubs :)

I never cook my stuffing with the meat as I find it makes the stuffing go all soggy and I like firm stuffing :)

Waitrose have tinned, jarred and vac packed in stock now. I have just bought mine!

Chestnut stuffing.

25g butter
1 small onion finely chopped
50g bacon finely chopped
half pack vac packed chestnuts, crumbled by hand
half a tablespoon in total mixed fresh parsley, sage and thyme, chopped, equal quantities of each herb
salt and pepper
hot water to soften bread

Fry the onion until soft with the bacon in the butter, set aside to cool.

Tear the bread into small chunks by hand, and crumble the chestnuts, add to the pan. I like a chunky texture.

Add the herbs and seasoning, and enough hot water to make the bread sticky.
Stir well to combine, the mixture should be able to clump together but not be sloppy.

Place most of the mixture in a shallow buttered ovenproof dish and smear a bit more butter over the surface, this will help it to crisp on top when baked. Reserve the rest in a freezer bag to put in the turkey, we tend to use this as flavouring only and don't eat it, we have the baked stuffing in the dish.

The beauty of this is that it can be made in advance and frozen, then defrosted and it is ready for the oven. I usually bake it for 25-30 mins at gas mark 6/ 200 C/ 400 F

I guess that it is enough for 4-5 servings from the dish. You could make a bacon free version for non-meat eaters.
