Best cut of beef for a Christmas day roast?

Okay, have tried and been disappointed with expensive bronze bloody turkeys and goose. Would like roast beef for Christmas dinner. Any suggestions which would be the best cut, beef is not something I often buy. DH fancies beef wellington but I'm not keen as it's a bit rich. Also wondering about sides - normally do the usual Christmas stuff of sprouts and chipolatas etc but would yorkshire puds work better with beef?

Haven't done any food shopping yet - thinking of a 2am trip to the local 24 hr tescos!!

If you want beef, go to a good butcher for the best quality. You can choose from topside, sirloin, rib or boned rib. Good beef makes good gravy from the juices, you could add a splash of red wine to it for a touch of luxury.

Regarding trimmings, you can do whatever you like. I've known people have yorkshires with turkey.

Rib is the best, either on the bone or boned and rolles, sirloin is also nice.

Don't buy from a supermarket! Go to a butcher and yes - rib or sirloin. I generally get topside for Sunday lunch from our farm shop and it is very good but for Christmas I would go with sirloin I think - and yes YPs a must!

Northern is right. Go to a butcher, you wont regret it. We have rib, cooked medium. Then turkey on boxing day as I love cold stuffing.

Don't forget horseradish.
