What are you eating on Boxing Day? (Leftovers fans, move along please)

We usually have another "festive" meal, though slightly lower key/less effort than Christmas Day. I have done pheasant/red wine/chestnut pie, filling frozen in advance; I've done stuffed squash. I am tending towards roast pork this year, except my ideal would then be belly, which would entail me getting up at 5 am or something stupid to get it in to roast slow enough! I am a bit out of ideas otherwise: can anybody suggest something special that freezes well or can be done a couple of days beforehand or doesn't take too long and is non-fiddly?

Along those lines, roast shoulder of pork is delicious. I do it with prunes and chestnuts. It is better if slow roasted but you can prep it the night before, put it in the oven and then on the day get up for half a minute to switch oven on and go back to bed!

But my usual festive meal for boxing day or the xmas season is breasts or legs of duck, cooked with orange juice and port and served with rice made with sultanas and pine nuts. Its so simple to make but still special.

Ah that sounds nice - I did wonder about duck then decided there were too many of us. Hadn't thought of doing breasts! Is there a recipe? In oven or fried?

Hmmmm if there are too many of you then breasts works out pricey.... Legs will be cheaper.

I usually fry first then add the orange juice, port, garlic and then put in the oven for a bit as it would be too pink.

You can also add redcurrant jelly or pomegranate a la Nigella!

We usually have a repeat of Christmas lunch on Boxing Day.

By the next day, we are onto turkey pie, then turkey curry.

if I wasn't I would probably do a roast pork shoulder. The jamie Oliver 6 hour one is nice.

Aw Normasnob that is sad :(
All this talk of slow-roast pork is making me wonder whether I can find the instruction book for my oven (we just bought the house a few months ago) and figure out how to programme it to come on in the middle of the night.
