Made several of these a couple of weeks ago- had a peek at them today and a couple have mould spots- where have I gone wrong & how can I salvage them?

If it was cheese, I'd say excise the mouldy parts but with something soft like a pudding, I think you might be better erring on the side of caution and throwing them out :( You could try boiling them up again, after cutting the obviously mouldy patches off, and they may well be fine, but you would have to decide if you're willing to take the chance, and not feed them to anyone very young, very old, pregnant, or immuno-compromised...
The mould will probably have started because they weren't air tight, weren't thoroughly cooled when stored, and you have spores in the air in wherever you stored them.

I would risk doing what Pombear has suggested, if you have the use of a food thermometer (can get manual ones in asda for a couple of pound) so you can be sure they are piping hot right through to the middle. If its only a small amount of mould and its for personal use, not gifts , I'd just cut it off and eat it anyway!
