Roast goose

We're having roast goose for the first time this year. It sounds Christmassy, but I've never had it before! What is the best stuffing to go with roast goose?

Oh lovely! Best stuffed with an appley pruney spicey mixture, in my opinion - have you got Delia's complete cookery course? She has a good recipe, accompanied with amazing amagnac prunes. How many are you serving? We had it last year and the year before.

Beware of serving portion advice as they are always, IMHO, leaning towards over estimating how much meat a goose provides. They are very very wide boned, meat sparse animals. Don't expect them to provide anything like the ratio of meat>carcass that chicken or turkey or even a duck provides.

if you have men with big appetites to serve, especially more than one of them, then one goose may not be adequate for three adults. You won't have any leftovers that's for sure.

The solution is to make loads of side dishes and plenty of stuffing/dressing. I mix cornbread in to my ordinary stuffing plus some dried fruit and chicken stock to moisten before cooking.

Thanks for the advice. Only two of us this year - one of the reasons we're going for goose Xmas Smile.

The stuffings recipes look interesting - I'm looking forward to trying something new! Now I just need to get a tree and can start getting properly Christmassy!

We had goose for the last 4 years but not this year Xmas Sad. DH's uncle lost all his geese to foxes Xmas Angry. So we're having turkey instead.

Stuffing - usually revolved around sticking a cut-up apple and onion inside - DH cooks Christmas dinner and he doesn't do any fancy stuffing! Xmas Wink.

And yes - one goose tends to just about feed 4 adults with medium appetites. They also drop an awful lot of fat, which probably needs to be poured off while cooking (keep it, it makes fantastic roast potatoes).

Also, if you haven't got one, it's a good idea to get one of those temperature probe thingies - if you buy a Gressingham goose, you might get one included free of charge - we did (when we had it in the UK).

I much prefer goose to dry and tasteless turkey.
this year at christmas dinner we will be 7 adults and 3 children and we will have 2 geese. looking forward to it.
agree, not as much meat, but the meat is very rich so you don't need as much.
they let off a lot of fat which you can collect in the ove and which is absolutely delicious instead of butter on a sandwich.

Oh, 1 goose between two will be perfect! Lucky you.

I love stuffing/dressing with lots of sharpish fruit in like cranberry as it is a perfect foil for any goose fat. Cumberland sauce stirred into any gravy is good too. or a spoon of cranberry relish added to the gravy.
