Veggie Christmas lunch ideas please!

DH and I are helping out with Christmas lunch at my parents' this year. 6 of us will be eating goose, SiL is veggie and would like to make her something a bit special too.
Needs to be fairly easy (am not a great cook!) and not too time consuming as have toddler & will be 5 months pg then too so not much energy!
Obviously goose will be taking priority in the oven...

Good food magazine have a fantastic veggie Christmas issue out right now, loads of fantastic recipes. Bought it when I didn't have a clue and now spoilt for choice!

DH and I are vegetarian

Over the years I've done various main courses ( pre DC they were more involved)
Now we have Quorn Roast, not the Linda Mc one, I don't like the middle

White nut loaf - Good Housekeeping recipe.
Savoury choux pastry made with cheese and filled with cooked mushrooms
filo pastry made in shallow bun tins-overlap the squares to look like stars. Filled with roast peppers and olives

Something that you can prepare/cook in advance then either heat at the last minute, or leave it to get on with it.

I always make a lovely easy veggie chestnut stuffing (in an attractive oven and or microwavable to table dish). You can make it a couple of weeks before and freeze it if nec. Ingredients; jar of unsweetened puree of chestnuts, mixed with fried chopped onions,carrots , garlic,celery and veg. stock or miso or soya sauce. You can mix in breadcrumbs for bulk and also use for a topping which you sprinkle on with olive oil and grated goats cheese if you like and bake gently for 30 mins or so.

This moroccan pie from BBC Good Food is delish.

A bit fiddly to make, but can be done the day before and warmed up. Any leftovers are great for boxing day too.

Last year I did mushroom & chestnut wrapped up in pastry, was v yummy
