What do you eat after Boxing Day?

Let me explain

We are out on Christmas Day so just need nibbles for evening.

Boxing Day we host another Christmas meal for the relatives we didn't see on the 25th.

By the 27th despite the mammoth shop I am usually forced to go out and buy more food-which I would really like to avoid this year as I want to stay in and relax.

Fridge space is an issue give me some ideas on things I could maybe make in advance and freeze- maybe with a festive twist- I still want the food to be special-

Cold meats, various salad, pickles, cheeses etc. This is what we live on for a good week after Xmas Grin

Boxing day tea for us is turkey, peas and chips. With loads of salad cream! So you could move to next day.

I agree a curry is definitely one of those days.

Then we seem to just feed off cold cuts, cheeses, pickles, salads, fruit and bread until our trousers don't fit it's time to go back to work.

You could keep the ingredients of potato salad, couscous salad, rice salad, pasta salad etc without fridge space? Part baked rolls for the freezer are really nice - the Aldi ones are great. Or a giant tin of crackers in the dry store?Then you have nice crusty bread without having to go out all the time. Freeze your milk. Have eggs ready and bacon in the freezer, do late brunches and skip lunch. Freeze all you hams, etc.

I've 48 mince pies in the freezer and I'll do 60 sausage rolls and get a few a night out.

We always want something light and spicy. Tom Yum soup made with turkey instead of chicken, crispy turkey with pancakes and plum sauce etc, stir fries with er turkey and noodles etc. Smoked fish is also popular. I make sure I have the right herbs in too, which lightens things, eg dill with thte smoked fish, coriander with the Asian food.

I buy lots of fresh bread and freeze it the day I get it. I also buy ready to bake bread which lasts ages.

yy to hm mince pies in the freezer - I freeze them raw

We usually gorge on gorgeous ham and creamy coleslaw sandwiches, loads of nibbly bits e.g. dim sum, filo prawns, yummy cheeses.

The DCs have similar minus the posh/obscure bits!!

Know what you mean about relaxing after Boxing Day - we like to hole up with the new toys, yummy grub and good telly/DVDs!!

I can't wait Grin
