Tell me about your Christmas day menu please.

I know it's early but I'm a control freak I like to be prepared well in advance for Christmas. So I have spent the last few days planning the menu for the big day. I like to offer several appetizers and puddings So far:

Thai Crab Cakes
Mushroom and Asparagus in a cream sauce on a crouton.
Smoked Salmon with herb toast.
Melon Cocktail for the DC

Roast Beef and Turkey
Yorkshire Pudding
Roast Potatoes
Roast Parsnips
Honey Glazed Carrots
Sprouts with Pancetta
Sage and Onion stuffing

Raspberry and Champagne Jelly
Lemon Tart

So I need two more puddings (not Christmas pudding) they need to be light and I would like one to be chocolate based.
Also my DB is vegetarian. I would like to offer him something other than nut roast Grin.

So tell me about your menus so I can pinch ideas please

As an ex-vegetarian, I can tell you that I still make a Sarah Brown cashew nut loaf every Christmas, it's delicious. But the other best veggie Christmas main course is Delia's Cheese and Parsnip roulade, recipe on her website. Really very good, and again, non-veggies fight over it too.

I think last year I did the creamed leeks the day before as they re-heat well. I washed and sliced (reasonably thinly - rings approx 1/4 inch thick) leeks then just sauteed very very gently in butter until well cooked through and soft. You need to keep the heat low, you don't want them to brown at all, and gently stir often. When cooked through, add plenty of double cream, a bay leaf, and salt and black pepper. Heat gently for a couple of minutes for the flavours to infuse, and that's it! It should be a loose, spoonable consistency.
It's really yummy with a roast dinner; it kind of functions as a bread sauce substitute but with more flavour.
I had it one time when I had a roast dinner eating out one day and decided to do it at Christmas. Everyone loved it last Christmas.

Traditional turkey roast at 3PM
We have a cheeseboard and cake for supper when the little kids are in bed.

I always have mushrooms in a cream and green peppercorn sauce. I make this into a pie for Christmas day with puff pastry. I eat leftovers cooked in red pepper.

Microwave porridge for brekkie.

Tub of fresh-soup-a-la-microwave, with bread & butter from the staff room for lunch

Something requiring "piercing the film" and "ensuring the product is hot before serving" for dinner.

6th Christmas I've worked in 7 years. I almost don't feel festive unless I'm in the hospital now :(

ImpYyn I'm cooking for 14. I do love it but I was a chef in my working life so I don't find cooking from scratch a chore at all.
Thanks for all the great suggestions. I'm pinching the creamed leeks and think I will have a trial run with the Cheese and Parsnip roulade for my veggie brother.
I am still pondering the third pudding but am leaning towards a chocolate and Grand Marnier mousse.

My mum always used to do leeks in a white sauce with Christmas dinner. Dp and I still like it but the dds won't go near it, so I don't bother with it anymore.
