Hi, I'd like to make one for our Christmas dessert as none of us likes Christmas pud. Does anyone have a tried and tested, no bake recipe they'd like to share?

Buy one from Tesco. Or track down a copy of the Baileys cookbook, it has a baked Baileys, chocolate and hazelnut cheesecake in it IIRC.

Picnicbasketcase, that is just mean, tempting us but then not following through with a recipe. You can't leave me hanging with the thought of a baileys cheesecake!!!

Sorry glitch Blush I had it years ago but I don't think I do anymore. Will have a look but I think DP may have charity shopped it cos we only made one of the recipes but we cocked it up and it went horribly wrong. (Brownies that ended up more like lumps of chocolate concrete.)

Hi, Here's my recipe it's a really easy no bake cheesecake. Made it for last years Christmas desert as none of us like traditional pud, it went down a storm.

For the base:
100g of ginger nuts
100g of digestives
100g of butter

For the filling:
250g of mascarpone
250g of philadelphia
300g of white chocolate
100ml of baileys (or more if your so inclined!)

Method:
Smash biscuits to crumbs, melt butter, combine and push into a 9 inch diametre tin.
Melt the chocolate taking care not to burn. Remove from heat and allow to cool slightly. Mix in the cheese, whisk in the Baileys and pour over the biscuit base. The mixture should be nice and thick but still able to pour.
Decorate with what ever you fancy - those little chocolate shavings from the baking section in Asda work well.

Whack it in the fridge for at least 6 hours but preferrably over night.
Try not to eat it all in one sitting.

Easy peasy. Hope you like it.

I like Christmas pudding and would never give it up on Christmas day so I now need to find an opportunity to have cheesecake as that must be made!
