Usually I use a roasting bag (a special type of plastic bag that is (obviously) oven safe - see them here: communities.canada.com/ottawacitizen/blogs/omnivore/archive/2008/12/08/perfect-christmas-turkey-is-in-the-bag-video.aspx ) and you just chuck a couple of tablespoons of seasoned flour in the bag - shake it around - then put the turkey in, make a few small slits in the top of the bag and tie it closed.

It works really well and as a bonus it also reduces the cooking time (and clean-up time!) dramatically too! Xmas Smile

Unfortunately I forgot to buy them this year Sad so I'm doing the cooking it upside down thing instead - will see how that goes (only 1pm here!)

well went for brining (could live without it) and phil vickery method but it took much longer than we thought. It was still lovely but I really think next year it will be Gordon's resting upside down trick. Smile

We had a 7kg bird and it was in the oven for just over 2 hours. Lovely and moist.

We did the upside down method.

Oh my god!! I just tried the dry brining method (I know its a contradiction) and the turkey came out amazing!!! Just so moist and succulent. I found it here. And best of all, you can prepare it from frozen even.

I did Nigella's brining method and it was amazing! we weren't going to have turkey this year as it's usually dry as sawdust, and i promised the family that if this brining thing didn't work this year then we won't have turkey again, but it was a taste sensation. not difficult at all - just involved being organised enough to get it soaking in the brine two days before xmas.

I'm surprised I haven't seen Nigella doing her turkey brining method on her Christmas show - which I usually love watching.
Did I miss it ?
Sounds like a great tip which could help lots of people, though a bit fiddly ?

As we're a veggie family we do other things.
My nut loaf was a big hit, and I hope I'll make the effort every year now, and not go back to shop bought, which are all peanut based.
If you make your own (anything) you know what's in it, and can put in better quality ingredients !

Roasties and parsnips were also fAb !

In fact, just off to have third helpings now !!
