Worried about missing signs

I feel I'm hearing more about people having sepsis (both adults and children) and I'm terrified about missing the signs. I have two children aged 5 and 2.
I'd say I was relatively cautious, and was very cautious with my first until he was about 1. Took him to out of hours GPs when he had high temperature and wasn't himself etc. Once when he was 8 months old out of hours GP sent us straight to hospital saying signs of sepsis as he had temperature, fast breathing and fast heart rate. Turned out not to be sepsis and he had a fairly regular throat infection. His temperature (and everything else) came down quickly after calpol and nurofen which the nurse administered.
Since then I've taken the view that if temperature comes down and other symptoms improve with calpol/ nurofen then unlikely to be sepsis.
I just feel scared about missing something. NHS and other websites list out symptoms you should be aware of but most of them are standard symptoms of any virus/ infection eg temperature / vomiting. Grey / mottled skin or a rash would raise alarm bells for me but surely people don't call 999 every time a child has a temperature.
I'm feeling a bit anxious about it now as my best friend recently had it and her signs weren't obvious. My son is currently unwell with slightly raised temperature but eating and not lethargic etc.
Not really sure of the point of this post but does anyone else feel anxious about this? Has anyone been caught out before and missed symptoms?

Hi, my daughter had sepsis at 3 weeks and she was very unwell. The first symptom we noticed was ‘grunting’ so she was making a funny noise when breathing - this apparently is a warning sign but we didn’t know at the time. She was also extremely pale and wouldn’t feed.
i will now always be terrified of sepsis, but I do think it gets easier as they get bigger. It’s easier to see if they’re themselves or not. I now go by whether the temp is coming down with calpol, how she seems in herself and her food and water intake. It’s so hard not to worry xx
