Nutrition advice or recipe book for sulky 3 year old

My DS is 3 and I'm worried that he is anaemic or lacking in some nutrition. He looks pale with dark shadows under his eyes and although he is very energetic and runs and jumps constantly, he says 'I'm SO tired' a lot and often has breakdowns when we are out - crying and not participating. I'm looking for a recommendation as to a regime I could follow to sort of regulate blood sugar etc - as based on how DH is - he is getting sugar crashes and perhaps needs more protein/iron in his diet. I've been looking at Davina McColls new book and that other one about quitting sugar - but I'm not much of a cook. I guess what I'm looking for is ideas for balanced meals and especially sweet treats so can make (as I know I give him too much chocolate (and screen time). He is also having a blood test. Any advice? (I know that discipline is another issue - but given that I am
On mat leave with 2nd DS who is 15 weeks, I'm not surprised about most of his strops). Thanks if anyone can help x

Wait for the test results and concentrate on your management of his behaviour- I know it's not easy with the little one (congratulations!) but consistency is the best thing you can give him. Lead by example. We had a similar issue with artificial additives, and it was tough not giving in to demands (NEVER, no matter how tired you are or how far into the process or how well established it seems to be) but it worked in the end.
He's a healthy, helpful, non-sulky teenager now. You'd never have thought it looking at his toddler self!

Thank you - that's reassuring. I will focus on the behaviour management going on then. We were in ooo yesterday as the cause came out - his recurrent middle ear infection is back (together with fever and vomiting (he's fine now after antibiotics/calpol etc)) but that explains why recently he has been so pale and irritated I guess. Once this has calmed down i will get back onto lowering sugar/artificial additives (that's probably the culprit). Thanks for responding - it was my first thread and I so wanted some help after I have (not do helpfully) lurked for months ;)
