We've got a great Usborne one. I'll try to find it.
DD is 4 and is fascinated by it although I'm not sure she gets it all. DS is just 6 and it's a little simple for him.

Oh no this is a great age. We took DD (4.4) to the Our Body/A corps ouvert exhibition last weekend, with real dead bodies opened up in all possible ways on display and she loved it. Dorling Kindersley do good books on this subject.

It's called 'Your body' in the Beginners series.

There is a bigger and more interesting one, called 'See Inside your Body' with over 50 flaps to lift, the illustrations are brilliant. My neighbour had it for her not-quite-four year old and he was completely obsessed with this book. The text is aimed at a slightly higher age (KS1/2 age 5+) but enough to keep them entertained just reading to them/lifting flaps etc.

I am an Usborne organiser, if you would like to order from me I will post free of charge.
