...and then if it's all going well to make it into a more formal contract thing. but i know nothing about how it all works. can you advise?

Have a look at this. It will tell you more about contracts - the employee has certain rights even before they receive a written contract (written contact must be given within 2 months) You could put into the contract about the trial period and any conditions for this time re notice if it's not working out etc(some do one month, some three).

It's not legal to pay cash in hand for the trial period but I'm sure many people do. (You can, of course, pay cash after tax and ni has been taken out, but I'm thinking you mean cash without the hassle of tax etc)
