Hi, I am a nanny to a 2 year old and was looking for some new ideas on fresh, easy to cook meals. If anyone has any good ones that go down well with toddlers i would love to hear them. Thanks

Hi katmack, you sounds like a great nanny to research this area.

Are your toddlers fussy? I also assume you are only cooking for them and not for the family as well, so your portions are smaller.

Mine are terribly fussy and so I make it a point not to spend too much time to cook them complicated meals only for them to reject it!

My aupair does scrambled eggs/beans/tuna mayo on toast, ham/jam/peanut butter (if ok with nuts) etc sandwich. Grill up some cocktail sausages. Hard boiled eggs. Mashed potato with cream/butter/grated cheese.

Pasta (use the small ones like shell, fusilli, penne, macaroni, rather than long spagetti-type ones) with cream, peas, sweetcorn, ham, sausage. Simple dips (eg sweet potato puree) with potato wedges, carrot sticks.

Toddlers love to feed themselves. Finger foods as well.

Every child I find is an individual. One week they like something, the next they won't touch it. I often use the internet to find recipes, deliaonline and Mumsnet Recipes section are often useful. I also use some books, some are reprints of wartime recipes - these tend to have less fat and sugar, some are egg free, due to rationing. They are therefore helpful for when food supplies run low and you need to conjure up something.
Things they can feed themselves, be it with a spoon, fork or their fingers.
When doing sauces, I find using a ladle helps for getting quantity right. One ladle of sauce is sufficient. I also use cups to measure pasta - one cup per child.
Making food that can be frozen can be useful as well, as you can make it in batches and defrost as needed. Cottage Pie, fish pie, cheese pie, that sort of thing can freeze well.
