Hi

Just thought I would start this thread after having so many brilliant replies for my last post.

Loved the meatball recipe, would appreciate any more, especially those healthy, easy recipes.

We make scrambled eggs with spinach. I just buy the frozen spinach. Thaough one "chunk" in the microwave for one minute. Chop it up. Scramble egg, and fry the whole lote (in olive oil). I sometimes also add chopped onio and cheese. Takes about 1o minutes tops to make this.

Pizza is a great place to sneak extra vegetables. If you grate the cheese and mik it with finely chopped veg before it goes on the pizza it will be very difficult for finicky eater to pick out the veg.

Good fillers: mushrooms, onions, spinach, borccoli, carrots, and of course minced meat or chicken work well too.

Do a search on amazon for "cook kids" and leave the book on the counter for her to have a look then ask her to make a menu / shopping list for some recipes for the following week. You may need to encourage her to plan ahead.

If I were you, I would ban eating lunch out for the time being. I don't like for my nanny to eat out every day. Say once a week is okay, but not more. Another thing I do is order one of those organic veg boxes for delivery and ask her to make her way through during the course of the week. I cook some on the weekends and she cooks some during the week. I cleaned out the cupboard on Sunday and left her a mountain of potatoes and onion yesterday and asked her to put them to good use. If she says "hmmm. wouldn't know what to do with that" I point her to the Joy of Cooking (my kitchen bible).
