I have holiday care only school children. They have a contract. I invoice all parents for each month on the first of the month, so I do the same for holiday only children . I don't charge a term time retainer, because I don't want them in term time.

I use a normal NCMA contract but write it as a 'zero hours' contract with fees payable in full for that particular holiday period to secure the place or split over 2 payments in the summer. Mind you my holiday only client isn't contractually obliged to every holiday (more an ad hoc 'call me & I'm sure I can fit you in as i havent got my TTO children client Grin)
